Description

These pistachio biscuits are a true jewel of Italian pastry! Preparing them with the Thermomix® is child's play and the result is simply delicious. The pistachio flour gives a unique flavor and a crumbly texture that melts in your mouth. Perfect for breakfast, a coffee break or as a small dessert after dinner. I love them accompanied by a glass of Vin Santo! The preparation is quick and simple, also ideal for those who do not have much experience in the kitchen. Try them, you won't regret it!

Ingredients (8 ingredients)

  • 1 piece eggs
  • 90 g sugar
  • 50 g butter
  • 150 g 00 flour
  • 8 g baking powder
  • 80 g pistachio flour
  • 1 q.b. fine salt
  • 1 q.b. icing sugar for decoration

Eggs and sugar in the bowl

Insert the egg and sugar into the bowl. Mix for 20 seconds at speed 4.

Adding the melted butter

Add the melted butter to the mixture in the bowl. Mix for 15 seconds at speed 3.

Incorporate the flour

Gradually add the flour to the bowl. Mix for 30 seconds at speed 4.

Adding the yeast

Add the baking powder to the mixture in the bowl. Mix for 20 seconds at speed 3.

Adding the pistachio flour and salt

Add the pistachio flour and a pinch of fine salt to the mixture in the bowl. Mix for 30 seconds at speed 3.

Forming the biscuits

Transfer the dough to a lightly floured surface. Form dough balls with your hands, trying to make them of homogeneous dimensions. Pass the balls in the icing sugar and cover them evenly.

Baking in the oven

Arrange the balls on a baking sheet covered with baking paper, keeping them spaced apart. Bake in a static oven preheated to 175°C for 10 minutes.

Cooling and serving

Once ready, let the pistachio biscuits cool for a few minutes before serving and enjoying them.
