Description

These delicate potato cookies from the Thermomix® are a simple, vegetarian treat made with potato starch, flour, and margarine. Ideal as Christmas finger food or dessert. Preparation takes about 45 minutes and yields approximately 60 cookies. Suitable for those who love simple Christmas cookies.

Ingredients (6 ingredients)

80 g Powdered Sugar
2 Päckchen Vanilla Sugar
200 g Potato Starch
120 g Flour
200 g Margarine
Baking Paper

Preparation (5 steps)

Mix dry ingredients

15 sec/Speed 4

Place 80 g powdered sugar, 2 packets of vanilla sugar, 200 g potato starch, and 120 g flour in the mixing bowl and mix for 15 sec/speed 4.

Add margarine and knead

2 min/Kneading speed

Add 200 g margarine in small flakes and knead for 2 min/knead stage. If necessary, add some flour and knead again for 30 sec/knead stage.

Form dough pieces

Remove the dough from the mixing bowl and form slightly more than hazelnut-sized balls. Preheat the oven to 175 °C (convection: 155 °C).

Bake cookies

Place the dough balls on baking sheets lined with baking paper and flatten them with a fork. Press the fork into some starch in between, so it does not stick to the dough. Bake in the preheated oven for 12-15 minutes. The cookies should remain light and not be browned.
