Description

These courgette meatballs are a fantastic way to enjoy vegetables. I have been preparing this recipe for years and it is always a success at home. The grated courgette, combined with parmesan and ricotta cheese, creates a smooth texture and a delicious flavour. They are perfect as an appetizer or light main course. In addition, they are prepared in a short time with the help of the Thermomix®. A vegetarian recipe that everyone will love! You can serve them with a homemade tomato sauce or simply enjoy them on their own. Go ahead and try them!

Ingredients (11 ingredients)

  • 800 g Courgette
  • 75 g Grated parmesan cheese
  • 75 g Ricotta cheese or curd cheese
  • 40 g Breadcrumbs
  • 1 piece Egg
  • to taste Dried basil (or any other herb)
  • to taste Salt
  • to taste Granulated garlic
  • to taste Ground black pepper
  • to taste Wheat flour
  • to taste Oil for frying

Preparation (5 steps)

Grate the courgette and drain

Wash the courgettes, remove the ends and cut them into pieces. Place the courgette pieces in the Thermomix bowl and grate for 5 Sec./Stufe 5. Pour the grated courgette into a fine-mesh sieve, season with salt and leave to drain over a deep container for an hour, covering the sieve to protect it from environmental dirt.

Remove excess water

After an hour, press the grated courgette with a spoon to remove excess water. Then, transfer the courgette to a clean cloth, roll up the ends and squeeze to release any remaining water it may contain.

Mix the ingredients

In a deep bowl, mix the egg, grated parmesan cheese, ricotta cheese, breadcrumbs, granulated garlic and dried basil. Add the drained courgette, season with salt and pepper to taste and mix until a homogeneous dough is obtained. If the dough is very soft, add more breadcrumbs.

Form the meatballs

Take portions of the dough, shape them into meatballs and coat them in wheat flour.

Fry the meatballs

Heat plenty of oil in a frying pan over high heat. Fry the meatballs until golden brown on all sides. Drain on a tray with absorbent paper and serve immediately.
