Description

I especially like to make this savory zucchini cake in the summer when the zucchini are just sprouting in the garden! It is super juicy and the cheese and herbs give it a great seasoning. I think it tastes equally good warm and cold and is perfect for a picnic or as a side dish for grilling. It can also be wonderfully prepared and taken along. If you like, you can add some diced ham or dried tomatoes - there are no limits to your imagination! An absolute favorite recipe that is always well received by us.

Ingredients (10 ingredients)

  • 600 g Zucchini
  • 1 piece Onion
  • 1 clove Garlic
  • 2 tbsp Olive oil
  • 3 piece Eggs (size M)
  • 200 g Grated cheese
  • 1 tbsp Herb mixture (chopped, fresh or frozen)
  • to taste Salt
  • to taste Pepper
  • 1 Pck. Fresh puff pastry (chilled section)

Preparation (9 steps)

Prepare zucchini

Wash, clean and dice 600 g zucchini. Set aside.

Chop onion and garlic

Put 1 peeled and quartered onion and 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5.

Sauté onion and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Add and sauté zucchini

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the diced zucchini and sauté for 5 min./100°C/reverse rotation speed 1. Then transfer to a bowl and let cool for 10 minutes. Drain off any water that may have formed.

Mix eggs, cheese and herbs

Whisk 2 eggs (size M) in a bowl with a fork, stir in 200 g grated cheese and 1 tbsp chopped herb mixture (fresh or frozen).

Prepare filling

Mix the cheese-egg mixture with the zucchini cubes and season everything vigorously with salt and pepper.

Fill and shape the strudel

Spread 1 pack of fresh puff pastry (chilled section) on a baking sheet. Distribute the zucchini-cheese mixture lengthwise in the middle and first fold the ends, then the long sides over the filling.

Brush strudel

Whisk the third egg (size M) and brush the surface of the strudel with it.

Bake strudel

Bake the strudel in a preheated oven at 170 °C circulating air for approx. 30 minutes until golden brown and serve warm or cold.
