Description

This cold lime delight is a perfect dessert for hot summer days! The crunchy biscuit base blends perfectly with the fresh and velvety lime cream. Preparing it is very simple with the Thermomix® and requires only a few ingredients. Ideal for a birthday party or a dinner with friends, this cake will win everyone over with its citrusy flavor and irresistible texture. A fresh and light dessert, perfect for ending a meal in style. Preparation is quick, but requires refrigeration for at least 3 hours.

Ingredients (9 ingredients)

  • 250 g Biscuits
  • 80 g Butter
  • 250 g Cream cheese
  • 250 ml Fresh liquid cream
  • 200 g Condensed milk
  • 3 piece Lime
  • 10 g Sheet gelatin
  • 50 g Sugar
  • Mint leaves

Preparation (10 steps)

Crumbled biscuits

Insert the biscuits into the bowl and chop finely for 10 Sec./Stufe 8. Transfer the crumbled biscuits to a bowl. Melt 80g butter in a saucepan over low heat. Add the melted butter to the crumbled biscuits and mix well until a homogeneous mixture is obtained. Pour the mixture into a springform pan (20 cm diameter) or into a cake ring, compacting the base and edges well with the back of a spoon. Place the biscuit base in the refrigerator for at least 20 minutes.

Softened gelatin

Put 10g sheet gelatin to soak in cold water for about 10 minutes. Squeeze the softened gelatin well. In a saucepan, heat 30ml fresh liquid cream (or milk) slightly. Remove from the heat and dissolve the squeezed gelatin in the hot cream, stirring until completely dissolved. Set aside.

Whipped cream

Thermomix® Setting
2 min/Speed 3.5

Insert 250ml fresh liquid cream into the clean and dry bowl. Add the grated zest of 1 lime. Whip the cream with the butterfly for 2 Min./Stufe 3.5, checking the consistency. Remove the butterfly.

Divided cream

Take about 50g of whipped cream and put it in a pastry bag for the final decoration. Transfer the remaining whipped cream to the refrigerator.

Cheese cream

Insert 250g cream cheese, 200g condensed milk, 50g sugar, the juice of 2 limes and the grated zest of 1 lime into the bowl.

Homogeneous cream

20 Sec./Speed 4

Mix for 20 Sec./Stufe 4 until a homogeneous mixture is obtained. With the spatula, collect the mixture from the walls of the bowl and mix again for 10 Sec./Stufe 3.

Incorporated cream

Gently add the whipped cream from the refrigerator to the cheese mixture, mixing with a spatula from the bottom up so as not to deflate it.

Added gelatin

Add the dissolved gelatin (previously filtered with a fine-mesh sieve) to the cream and mix gently with a spatula to mix everything well.

Stuffed cake

Take the biscuit base from the refrigerator. Pour the lime cream inside the base, level the surface and put the cake in the refrigerator for at least 3 hours.

Final decoration

After the resting time, unmold the cake. Decorate the surface with tufts of whipped cream using the pastry bag. Add lime wedges and slices and a few fresh mint leaves as decoration.
