Description

These baked custard muffin treats are a delightful twist on classic French toast. I've been making these for years, and they're always a hit at brunch or as a sweet snack. Ingredients (13 ingredients)

  • 1.25 cups all-purpose flour
  • 0.66666666666667 cups milk
  • 0.5 cups yogurt
  • 0.5 cups white sugar
  • 0.5 cups butter, melted
  • 0.5 cups raisins
  • 0.33333333333333 cups dark brown sugar
  • 2 tablespoons maple syrup
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt

Preparation (4 steps)

Preheat oven

Preheat oven to 350 degrees F (175 degrees C). Grease 24 muffin cups or line with paper muffin liners. This step is done outside of the Thermomix.

Combine ingredients

Add 1 1/4 cups all-purpose flour, 2/3 cup milk, 1/2 cup yogurt, 1/2 cup white sugar, 1/2 cup melted butter, 1/2 cup raisins, 1/3 cup dark brown sugar, 2 tablespoons maple syrup, 1 1/2 teaspoons vanilla extract, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, 1/2 teaspoon baking soda, and 1/2 teaspoon salt to the Thermomix bowl. Mix for 30 seconds/Stufe 4 until a batter forms.

Spoon batter into muffin cups

Spoon batter into prepared muffin cups. This step is done outside of the Thermomix.

Bake

Bake in the preheated oven until golden and the tops spring back when lightly pressed, 20 to 25 minutes. This step is done outside of the Thermomix.
