Description

These fruit filled sweets are a real treat for the palate! Prepared with a fragrant shortcrust pastry and a delicious filling of berry jam and chopped walnuts, they are perfect for breakfast, a snack or as a dessert after a meal. The recipe is simple and quick to make with the Thermomix®, and the result is an irresistible dessert that everyone will love. I often prepare them for Sunday brunch and they always disappear in the blink of an eye! Berry jam goes perfectly with shortcrust pastry, but you can also use other jam to taste. A tip: try adding a pinch of cinnamon to the dough for an extra touch!

Ingredients (10 ingredients)

  • 3 piece eggs
  • 150 g sugar
  • 120 g seed oil
  • 1 limoni lemon _the grated peel_
  • 500 g 00 flour
  • 8 g baking powder
  • 250 g berry jam _or other jam to taste_
  • 50 g walnuts _chopped_
  • water _q.s. for brushing_
  • pearl sugar _q.s._

Preparation of the shortcrust pastry

In the Thermomix bowl, insert the eggs, sugar and grated lemon zest. Mix for 20 Sec./Speed 4.

Addition of dry ingredients

2 min/Kneading speed

Add the flour and baking powder to the bowl. Knead for 2 Min./Kneading stage.

Dough processing

Transfer the dough to a lightly floured surface and work it briefly with your hands to form a smooth ball. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.

Preparation of the sweets

Preheat the oven to 180°C. Roll out the dough on a floured surface and cut out discs with a pastry cutter. Arrange half of the discs on a baking sheet lined with parchment paper. Spread a teaspoon of berry jam and a sprinkling of chopped walnuts on each disc.

Closing and decoration

Cover with the remaining discs and seal the edges well. Brush the surface with a little water and sprinkle with pearl sugar.

Baking in the oven

Bake for about 15-20 minutes, or until the sweets are golden brown. Let cool completely before serving.
