Description

Cinnamony Dominoes are a Christmas confectionery, prepared in the Thermomix® with honey, sugar, butter and gingerbread spice. The recipe is ideal for festive occasions and as a sweet finger food. Preparation takes a total of 180 minutes, including 90 minutes of active work, and yields approximately 40 pieces. Perfect for anyone who enjoys homemade cookies and desserts during the Christmas season.

  • 250 g Honey
  • 125 g Sugar
  • 75 g Butter
  • 1 TL Gingerbread spice
  • 0.5 TL Cinnamon
  • 0.5 TL Cloves, ground
  • 1 TL Baking soda
  • 2 EL Water
  • 500 g Flour (Type 550)
  • 200 g Apricot jam
  • 2 EL Rum
  • 200 g Marzipan raw material
  • 50 g Powdered sugar
  • 1 TL Rose water
  • 150 g Red currant jelly
  • 1 EL Rum
  • 200 g Bittersweet chocolate
  • 20 g Coconut fat

Preparation (12 steps)

Prepare honey cake dough

Thermomix® Setting

Add honey, sugar, butter and spices to the mixing bowl and heat for 5 min./50°C/speed 2.

Complete honey cake dough

2 min/Kneading speed

Stir baking soda and water and add together with the flour to the mixing bowl. Process for 2 min./kneading stage to a smooth dough.

Roll out and bake dough

Roll out the dough on a floured work surface to about 1 cm thick and place on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C top/bottom heat for about 15 minutes. Then let it cool down.

Prepare fruit filling

Put apricot jam and rum in the mixing bowl and heat for 3 min./50°C/speed 2.

Spread fruit filling

Spread the jam on the cooled honey cake base and let it set.

Prepare marzipan

Put marzipan raw material, powdered sugar and rose water in the mixing bowl and mix for 20 sec./speed 4.

Roll out and place marzipan

Roll out the marzipan between two layers of cling film and place on the jam. Press down lightly.

Prepare jelly

Put red currant jelly and rum in the mixing bowl and heat for 3 min./50°C/speed 2.

Spread jelly

Spread the jelly on the marzipan and let it set.

Cut dominoes

Cut the cake into approximately 3 x 3 cm cubes.

Prepare chocolate glaze

Put bittersweet chocolate and coconut fat in the mixing bowl and melt for 4 min./50°C/speed 2.

Glaze dominoes

Dip the dominoes in the chocolate and let them set on a wire rack.
