Description

This recipe for duck breast with red cabbage and finger noodles is a festive main course, ideal for the winter season. The combination of tender duck breast, spicy red cabbage and golden brown fried finger noodles ensures a special taste experience. Preparation takes about 2.5 hours and is designed for 4 servings. Perfect for Christmas or New Year's Eve.

Ingredients (9 ingredients)

  • 2 Stück Organic oranges
  • 2 Stück Duck breast fillets
  • 350 g Salt
  • Pepper
  • 700 g Red cabbage
  • 2 EL Butter
  • 4 EL Red wine
  • 2 EL Cranberries
  • 800 g Finger noodles

Preparation (8 steps)

Prepare oranges

Rinse and pat dry the organic oranges. Grate 1 tablespoon of zest from one orange into fine strips. Peel and fillet both oranges. Squeeze the remaining orange pieces and collect the juice.

Prepare and pre-cook duck breast

Pat the duck breast fillets dry and score the skin several times in a crosswise pattern. Season with salt and pepper. Place the orange strips with the fillets on a plate and pre-cook in a preheated oven at 70°C top/bottom heat for 2 hours.

Prepare red cabbage

Clean the red cabbage, quarter it and remove the stalk. Place the red cabbage in the mixing bowl and chop for 5 seconds/speed 5. Push down with the spatula.

Simmer red cabbage

Put 2 tablespoons of butter in the mixing bowl and add the red cabbage, 4 tablespoons of red wine, 2 tablespoons of cranberries and the collected orange juice. Season with salt and simmer for 5 min./100°C/speed 1.

Season red cabbage

Add the orange segments to the red cabbage, mix with a little salt and pepper and season the red cabbage.

Fry duck breast

Place the breast fillets, skin side down, in a hot pan and fry until crispy for about 5 minutes. Turn and fry for about 1 minute more. Remove and keep warm.

Fry finger noodles

Fry the finger noodles in the duck fat until golden brown and season with salt and pepper.

Arrange

Cut the duck breast into slices. Arrange everything and garnish with star-shaped croutons and parsley if desired.
