Description

These small macaroons are a true invitation to indulgence! I often prepare them for birthdays or family celebrations, and they always disappear in the blink of an eye. The base is simple: egg whites beaten until stiff, icing sugar and almond powder. They can then be flavored endlessly: vanilla, coffee, chocolate... Let your imagination run wild! The chocolate ganache for the filling adds an extra touch of indulgence. These macaroons are gluten-free, which is an advantage for people with intolerances. A real delight to share!

Ingredients (4 ingredients)

  • vanilla, coffee, chocolate
  • 3 environ egg whites
  • 250 g icing sugar
  • 125 g almond powder

Preparation of the beaten egg whites

Insert the whisk. Put about 3 egg whites and a pinch of salt in the bowl and whisk for 3 Min./Stufe 4 until very firm peaks form.

Mixing the powders

Thermomix® Setting
10 sec/Speed 3

Remove the whisk. Add 250g of icing sugar and 125g of almond powder to the bowl and mix for 10 Sek./Stufe 3.

Incorporation of the beaten egg whites

Gently fold the egg whites into the powder mixture. Add the flavor of your choice (vanilla, coffee, chocolate). Mix gently with a spatula.

Baking the macaroons

Fill small flexible molds with a teaspoon of the mixture. Let stand for about 1/4 hour. Bake in a preheated oven at 160°C for 15 minutes. Watch the baking carefully.

Preparation of the ganache (if chocolate)

If the macaroons are chocolate: prepare a chocolate ganache. Melt chocolate in a bain-marie or in the microwave.

Garnishing the macaroons

Garnish the macaroon shells with a layer of ganache of about 3/4 mm by joining them 2 by 2.
