Description

This summer noodle salad with arugula and tomatoes is a vegetarian dish that is quick to prepare in the Thermomix®. The main ingredients are noodles, arugula, cocktail tomatoes and mozzarella. In 55 minutes, a portion for 4 people is created. Ideal as a light main course, for parties or as a side dish for grilling.

Ingredients (11 ingredients)

  • 300 g Noodles
  • 100 g Arugula
  • 250 g Cocktail tomatoes
  • 50 g Sun-dried tomatoes in oil
  • 125 g Mozzarella balls
  • 20 g Pine nuts
  • 200 ml Sieved tomatoes
  • 2 EL Olive oil
  • 2 EL Aceto Balsamico
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (4 steps)

Cook noodles

Thermomix® Setting

Put 300 g noodles (e.g. farfalle) into the mixing bowl, cover with water and cook in the simmering basket according to the package instructions. Hang in the simmering basket. The cooking time depends on the type of pasta. After cooking, let the noodles cool.

Prepare dressing

Add 200 ml sieved tomatoes, 2 tbsp olive oil (or oil from the sun-dried tomatoes), 2 tbsp Aceto Balsamico, salt and pepper to taste to the mixing bowl and stir for 10 sec./level 3.

Roast pine nuts

Roast 20 g pine nuts in a pan without fat until golden brown. Then let it cool.

Mix salad

Wash 100 g arugula and spin dry. Halve 250 g cocktail tomatoes. Cut 50 g sun-dried tomatoes into strips. Drain 125 g mozzarella balls. Put all ingredients (noodles, arugula, cocktail tomatoes, sun-dried tomatoes, mozzarella balls and roasted pine nuts) into a large bowl. Pour the prepared dressing over it and mix carefully. Let the salad sit for at least 30 minutes before serving.
