Description

This salmon fillet on Mediterranean vegetable bed is a light and healthy main course, ideal for a low-carb diet. Preparation with the Thermomix® simplifies the preparation of the vegetables and marinade. In just 40 minutes, this dish is ready and offers a protein-rich meal for the whole family.

Ingredients (13 ingredients)

  • 500 g Salmon fillet without skin
  • 1 Stück Zucchini
  • 2 Stück red onions
  • 200 g Mushrooms
  • 2 Stück Bell peppers
  • 200 g Cherry tomatoes
  • 150 g Feta
  • 5 EL Olive oil
  • 2 Zehen Garlic
  • 1 EL Oregano
  • nach Geschmack Salt
  • nach Geschmack Pepper

Chop onions

Place 2 red onions in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down.

Sauté onions

Add 2 tablespoons of olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop garlic

Thermomix® Setting

Add 2 cloves of garlic to the mixing bowl and chop for 3 sec./speed 7. Use the spatula to push down.

Prepare vegetables

Halve 1 zucchini lengthwise and cut into slices. Halve 200 g of mushrooms. Cut 2 bell peppers into strips. Halve 200 g of cherry tomatoes.

Prepare marinade

Add remaining olive oil (3 tbsp), oregano (1 tbsp), salt, pepper and chili to the mixing bowl and mix for 10 sec./speed 3.

Mix vegetables

Place zucchini, mushrooms, peppers, tomatoes and crumbled feta (150 g) in a casserole dish. Pour half of the marinade from the mixing bowl over the vegetables and mix.

Pre-bake vegetables

Place the casserole dish in the oven preheated to 180°C (top and bottom heat) and bake for 10 minutes.

Prepare salmon

Wash and pat dry the salmon fillets (500 g). Brush with the remaining marinade from the mixing bowl.

Bake salmon

Place the salmon over the pre-baked vegetables and bake in the oven for another 20 minutes until the salmon is cooked.
