Description

Salmon with Mediterranean vegetables from the oven.

Ingredients (13 ingredients)

  • 500 g Salmon fillet without skin
  • 1 Stück Zucchini
  • 2 Stück red Onions
  • 200 g Mushrooms
  • 2 Stück Bell peppers
  • 200 g Cherry tomatoes
  • 150 g Feta
  • 5 EL Olive oil
  • 2 Zehen Garlic
  • 1 EL Oregano
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Chili

Preparation (9 steps)

Chop onions

Place 2 red onions in the mixing bowl and chop for 3 seconds/speed 5. Scrape down with the spatula.

Sauté onions

Add 2 tablespoons of olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop garlic

Thermomix® Setting

Place 2 cloves of garlic in the mixing bowl and chop for 3 seconds/speed 7. Scrape down with the spatula.

Prepare vegetables

Halve 1 zucchini lengthwise and slice. Halve 200 g mushrooms. Cut 2 bell peppers into strips. Halve 200 g cherry tomatoes.

Prepare marinade

Add remaining olive oil (3 tbsp), oregano (1 tbsp), salt, pepper and chili to the mixing bowl and mix for 10 seconds/speed 3.

Mix vegetables

Place zucchini, mushrooms, peppers, tomatoes and crumbled feta (150 g) in a baking dish. Pour half of the marinade from the mixing bowl over the vegetables and mix.

Pre-bake vegetables

Place the baking dish in the oven preheated to 180°C (top and bottom heat) and bake for 10 minutes.

Prepare salmon

Wash the salmon fillets (500 g) and pat dry. Brush with the remaining marinade from the mixing bowl.

Bake salmon

Place the salmon over the pre-baked vegetables and bake for another 20 minutes in the oven until the salmon is cooked.
