Ingredients (17 ingredients)

  • 100 ml lukewarm milk
  • 100 g Set yogurt
  • 100 ml Oil
  • 400 g Flour
  • 20 g Fresh yeast
  • 1 Stück Egg white (egg yolk for brushing)
  • 1.5 TL Sugar
  • 1 TL Salt (level)
  • 3 Stück Medium-sized potatoes
  • 1 Stück Small onion
  • 3 EL Olive oil
  • 1 TL Tomato paste
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Paprika powder
  • nach Geschmack Cumin
  • nach Geschmack Finely chopped parsley

Preparation (11 steps)

Cook the potatoes

Peel 3-4 medium-sized potatoes and cut into pieces. Cook until soft in a pot of water.

Chop the onion

Peel and halve 1 small onion. Place in the mixing bowl and chop.

Sauté the onion

Add 3-4 tablespoons of olive oil to the onions in the mixing bowl and sauté.

Add tomato paste

Add 1 teaspoon of tomato paste to the onions and sauté briefly.

Add potatoes, spices and parsley

Mash the cooked potatoes and add them to the mixing bowl along with a pinch of salt, pepper, paprika powder, cumin and finely chopped parsley.

Mix the filling and let it cool

Mix the filling well and let it cool. Transfer to a bowl and set aside.

Prepare the dough

Place 100 ml lukewarm milk, 100 g set yogurt, 100 ml oil, 1.5 tsp sugar, 1 tsp salt (level), 1 egg white and 20 g fresh yeast in the mixing bowl.

Add flour and knead the dough

Add approx. 400 g flour and knead to a soft dough.

Let the dough rise

Place the dough in a bowl, cover and let rise in a warm place for 50-60 minutes.

Shape and fill the turnovers

After rising, roll out the dough on a floured work surface and cut into squares. Place some filling in the middle of each and form into turnovers.

Brush and bake the turnovers

Brush the turnovers with egg yolk and bake in the preheated oven.
