Ingredients (7 ingredients)

  • 600 g Wheat flour, type 550
  • 400 g Potatoes, predominantly firm cooking
  • 1.5 TL Salt
  • 42 g Fresh yeast, 1 cube
  • 1 TL Honey, liquid
  • 2 EL Soft butter or neutral vegetable oil
  • Poppy seeds or sesame seeds

Preparation (11 steps)

Prepare potatoes

Thermomix® Setting

Wash, peel and roughly dice 400 g potatoes (approx. 3 cm). Place the diced potatoes in the simmering basket. Add 180 ml water to the mixing bowl, insert the simmering basket and cook for 15 min./100°C/speed 1. Collect 180 ml of the cooking water and let it cool until lukewarm.

Mash potatoes

Place the cooked potato cubes in a bowl and mash finely with a potato masher or fork.

Prepare yeast

Pour 70 ml lukewarm cooking water into a cup. Add 42 g fresh yeast and 1 tsp honey and stir until the yeast has dissolved.

Prepare dough

Add 600 g wheat flour, 1.5 tsp salt, 2 tbsp soft butter (or oil), the yeast-cooking water mixture and the remaining cooking water (110 ml) to the mashed potatoes in the mixing bowl.

Knead dough

Knead the dough for 3 min./kneading function to form a soft, smooth dough.

Let dough rest

Place the dough in a bowl, cover with a tea towel and let it rest in a room-temperature place for 30 minutes, until the volume has increased significantly.

Shape rolls

Place the dough on a floured work surface, flatten it slightly and divide it into approx. 12 portions (approx. 100 g each). Form into balls with floured hands and place on a baking sheet lined with baking paper.

Sprinkle rolls and let rise

If desired, brush the rolls with water and sprinkle with poppy seeds or sesame seeds. Then cover the rolls on the baking sheet again and let them rise for 10 minutes.

Prepare oven

Preheat the oven to 190 °C top and bottom heat in good time. Place an oven-proof cup or small stainless steel bowl in the oven so that it can heat up as well.

Bake rolls

Shortly before the rolls go into the oven, pour 150 ml water into the heated cup/bowl in the preheated oven. Bake the rolls on the (2nd shelf from the bottom) for approx. 30 minutes until they are light brown.

Let rolls cool

Remove the rolls from the oven and let them cool on a wire rack. They taste best lukewarm.
