Description

This rustic bread is an absolute delight, especially when it comes fresh and warm from the oven! I like to bake it on the weekend for a hearty breakfast or as a side dish for dinner. The combination of wheat and rye flour gives it a savory flavor, while a dash of yogurt and honey provides a pleasant moistness. The long resting time is important so that the dough can develop its full aroma. A tip: It becomes even more aromatic with a little caraway or fennel seeds in the dough. Perfect for all bread lovers!

Ingredients (10 ingredients)

  • 1 tbsp Salt
  • 350 g Wheat flour
  • 150 g Rye flour
  • 1 Pck. Dry yeast
  • 1 Prise(n) Sugar
  • 250 ml Water, lukewarm
  • 150 g Yogurt
  • 1 tbsp Honey
  • 2 tbsp Vinegar
  • Flour for dusting

Put 1 tbsp salt, 350 g wheat flour, 150 g rye flour, 1 pack dry yeast, 1 pinch of sugar, 250 ml lukewarm water, 150 g yogurt, 1 tbsp honey and 2 tbsp vinegar into the mixing bowl and knead into a dough for 3 min/kneading stage.

Let the dough rest

Remove the dough from the mixing bowl, place in a bowl, cover and let rest in a warm place for at least 2 hours.

Shape and bake bread

After resting, do not knead the dough any more, but place it directly into a suitable baking tin. Dust with some flour and cut with a sharp knife. Bake in a preheated oven at 200°C top/bottom heat for 30 minutes.
