Description

This salad is a true classic and super easy to prepare with the Thermomix®! The creamy garlic dressing, the crisp lettuce and the crunchy croutons make it an absolute highlight. I especially like to make it in the summer when the lettuce comes fresh from the market. It is perfect as a starter or light main course and is always a hit at parties. If you like, you can add grilled chicken or shrimp. A great recipe that is quick and always succeeds!

Ingredients (13 ingredients)

  • 2 piece Romaine Lettuce Hearts
  • 4 slice Toast bread
  • 3 tbsp Olive oil
  • 40 g Parmesan
  • 1 clove Garlic
  • 2 piece Anchovy fillets
  • 1 tsp Mustard
  • 2 tbsp Lemon juice
  • 1 tbsp Worchestershire sauce
  • 2 piece Egg yolks
  • 120 ml Sunflower oil
  • Salt
  • Pepper

Preparation (6 steps)

Grate parmesan

Thermomix® Setting
5 sec/Speed 8

Place 40 g Parmesan in pieces in the mixing bowl and chop for 5 sec./speed 8. Transfer and set aside.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Place 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare dressing

Thermomix® Setting
15 sec/Speed 5

Add 2 anchovy fillets, 1 tsp mustard, 2 tbsp lemon juice, 1 tbsp Worchestershire sauce and 2 egg yolks to the garlic in the mixing bowl and mix for 15 sec./speed 5.

Emulsify dressing

Thermomix® Setting
Speed 3

With the knife running (speed 3), slowly pour 120 ml sunflower oil through the lid opening until a creamy emulsion forms. Season with salt and pepper.

Prepare croutons

Remove the crust from 4 slices of toast bread and cut the bread into cubes. Heat 3 tbsp olive oil in a pan and fry the bread cubes in it until golden brown. Alternatively, roast the bread cubes in a coated pan without oil.

Arrange salad

Wash 2 romaine lettuce hearts and cut into bite-sized pieces. Distribute the lettuce on plates, add some dressing and garnish with the grated Parmesan and croutons. Serve immediately.
