Description

Ingredients (11 ingredients)

  • 1 piece large head broccoli, cut into florets
  • 0.5 piece red bell pepper, chopped
  • 0.5 cup dried cranberries
  • 0.5 cup chopped walnuts
  • 4 piece scallions, chopped
  • 0.75 cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon white sugar
  • 1 tablespoon curry powder, or more to taste
  • 0.5 teaspoon cayenne pepper (Optional)

Preparation (5 steps)

Prepare the broccoli

Cut the 1 large head of broccoli into florets. Place the broccoli florets into the mixing bowl and chop for 3 Sec./Stufe 4.

Chop the red bell pepper

Add the ½ red bell pepper, chopped into the mixing bowl and chop for 3 Sec./Stufe 4.

Add cranberries, walnuts, and scallions

Add the ½ cup dried cranberries, ½ cup chopped walnuts, and 4 chopped scallions to the mixing bowl.

Prepare the dressing

Thermomix® Setting
10 sec/Speed 3

Add the ¾ cup mayonnaise, 2 tablespoons fresh lime juice, 2 tablespoons apple cider vinegar, 1 tablespoon white sugar, 1 tablespoon curry powder, and ½ teaspoon cayenne pepper (optional) to the mixing bowl. Mix for 10 Sec./Stufe 3.

Combine and chill

Pour the dressing over the broccoli mixture in the mixing bowl and mix for 10 Sec./Stufe 2/Linkslauf. Refrigerate the salad until the flavors blend, for at least 2 hours or overnight. Toss well before serving.
