Description

This spring salad with nuts is a vegetarian main course prepared with white asparagus, cherry tomatoes, arugula, and fresh goat cheese. Hazelnut kernels and walnut oil round off the salad. Preparation in the Thermomix® takes about 35 minutes and yields 4 servings. Ideal for a light, healthy cuisine in spring or autumn.

Ingredients (13 ingredients)

  • 1 kg white asparagus
  • 150 g Cherry tomatoes
  • 1 Bund Arugula
  • 150 g Fresh goat cheese
  • 20 g Hazelnut kernels
  • 3 EL Walnut oil
  • 1 TL Sugar
  • 1 Prise Salt
  • 2 EL Pumpkin seed oil
  • 2 EL Balsamic vinegar
  • 3 EL Olive oil
  • 1 EL Apple vinegar
  • 1 Prise Pepper

Preparation (6 steps)

Peel and cut asparagus

Peel asparagus and break off woody ends. Cut stalks diagonally into pieces.

Prepare tomatoes and arugula

Quarter the tomatoes. Pick over the arugula and remove hard stems.

Prepare cheese and hazelnuts

Cut cheese into slices. Roughly chop hazelnut kernels.

Fry asparagus

Heat 2 tbsp walnut oil in a separate pan. Add asparagus, season with 1 tsp sugar and salt. Fry for 10-12 minutes. Add 2 tbsp pumpkin seed oil and 2 tbsp balsamic vinegar.

Prepare dressing

Add 1 tbsp walnut oil, 3 tbsp olive oil, 1 tbsp apple vinegar, salt and pepper to the mixing bowl and stir for 10 sec./speed 4.

Arrange

Arrange tomatoes, arugula and the fried asparagus on plates. Drizzle the dressing over it. Garnish with cheese slices and hazelnut kernels. Sprinkle with some pepper.
