Description

This vegetarian pea soup with fried chanterelles, prepared in the Thermomix®, is a quick and easy dish with potatoes, shallots and frozen peas. The soup is ready in just 30 minutes and yields 4 servings. Ideal as a light appetizer or main course for the whole family. Perfect for seasonal cuisine in spring and autumn.

Ingredients (11 ingredients)

  • 200 g Potatoes
  • 2 Stück Shallots
  • 300 g Chanterelles
  • 5 EL Olive oil
  • 800 ml Vegetable broth
  • 300 g Frozen peas
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Nutmeg
  • 8 Stiele Thyme
  • 200 g Whipping cream

Preparation (10 steps)

Prepare potatoes and shallots

Peel 200 g potatoes and 2 shallots and cut into cubes. Set the prepared ingredients aside.

Prepare mushrooms

Clean 300 g chanterelles and halve or quarter if necessary, depending on the size. Set the prepared mushrooms aside.

Sauté mushrooms and shallots (part 1)

Heat 2.5 tbsp olive oil in a pan. Sauté half of the prepared mushrooms and the diced shallots in it for about 3 minutes. Then remove half of the mushroom-shallot mixture from the pan and keep warm in the oven at 50°C.

Cook potatoes and broth

Put the diced potatoes and 800 ml vegetable broth into the mixing bowl and cook for 10 min./100°C/speed 1.

Add peas and continue cooking

Add 300 g frozen peas to the mixing bowl and cook for another 5 min./100°C/speed 1.

Prepare thyme

Wash 8 sprigs of thyme and pluck the leaves. Set the thyme leaves aside.

Remove peas

Remove some peas from the soup with a spoon and set aside for decoration.

Puree soup

30 sec/Speed 8-10

Puree the soup in the mixing bowl for 30 sec./speed 8-10, slowly increasing the speed.

Add cream and season

Add 200 g whipping cream to the mixing bowl and stir in for 10 sec./speed 3. Season with salt, pepper and nutmeg and bring to the boil for 2 min./90°C/speed 1.

Serve

Fill the soup into bowls, garnish with the kept warm mushrooms and shallots, the set aside peas and thyme leaves and serve.
