Description

Peanut toffee squares are a delicious finger food dessert made in the Thermomix® with flour, peanuts, sugar, butter and cream. This recipe from the Cookies category is ideal for festive occasions and the Christmas season. The preparation takes a total of 120 minutes, of which 60 minutes are active work. The recipe yields about 30 servings. Suitable for anyone looking for a sweet pastry to enjoy with coffee or as a dessert.

Ingredients (10 ingredients)

  • 200 g Flour
  • 100 g Ground peanuts
  • 125 g Sugar
  • 1 Stück Egg
  • 150 g Butter or margarine
  • 500 ml Cream
  • 300 g Crumbled rock candy sugar
  • 50 g Butter
  • 5 EL Whiskey cream liqueur
  • 200 g Unsalted, peeled and chopped peanuts

Prepare the dough

Thermomix® Setting

Place flour, ground peanuts, sugar, egg and butter or margarine in the mixing bowl and knead with the Patix dough knife for 2 min./kneading level to form a smooth dough.

Chill the dough

Wrap the dough in plastic wrap and let it rest in the refrigerator for one hour.

Roll out the dough

Knead the dough again briefly, roll it out on a floured work surface to a 35 x 20 cm rectangle and place it on a baking sheet.

Prick and bake the dough

Prick the dough several times with a fork, enclose with a square baking frame if necessary and bake in the oven preheated to 180 °C for about 12 minutes until golden brown.

Let the base cool

Remove the finished base and let it cool.

Prepare the toffee

Put cream, crumbled rock candy sugar, butter, whiskey cream liqueur and chopped nuts into the mixing bowl and cook for 25 min./90°C/speed 2 without a measuring cup, stirring constantly, until the mixture is thick and light brown. Use a spatula.

Spread toffee on shortcrust pastry

Spread the mixture on the shortcrust pastry, cut into cubes after cooling and store in a cookie tin until ready to eat.
