Description

This exotic salad is a real delight for the taste buds! I love the combination of marinated chicken, juicy mango and crunchy Brazil nuts. The mango vinaigrette adds a sweet and tangy touch that goes perfectly with the rest of the ingredients. It is a fresh and light salad, ideal for a sunny lunch or a summer dinner. The preparation is simple and quick, and the result is always a success. Feel free to add other fruits or vegetables according to your desires! Perfect for a light and flavorful meal.

Ingredients (13 ingredients)

  • 200 g Rocket
  • 4 piece Chicken breast(s)
  • 2 c. à soupe Soy sauce
  • 2 c. à soupe Honey
  • 100 g Red cabbage
  • 40 noix Brazil nuts
  • 2 piece Small
  • Coriander
  • 1 c. à café Mustard
  • 1 c. à soupe Chicken breast(s)
  • 6 c. à soupe Hazelnut oil
  • 2 c. à soupe Mango juice
  • Salt pepper

Preparation (5 steps)

Chicken marinade

Thermomix® Setting
10 sec/Speed 3

In the Thermomix bowl, mix 2 tbsp of soy sauce and 2 tbsp of melted honey. Mix 10 Sec./Speed 3. Brush the 4 chicken breasts with this preparation. Cover and set aside in the refrigerator for 1 hour.

Chop the Brazil nuts

Put 40 Brazil nuts in the Thermomix bowl and chop 5 Sec./Speed 5. Set aside.

Preparation of the vinaigrette

Thermomix® Setting
10 sec/Speed 3

In the Thermomix bowl, mix 1 teaspoon of mustard and 1 tablespoon of balsamic vinegar. Mix 5 Sec./Speed 3. Add 2 tablespoons of mango juice then 6 tablespoons of hazelnut oil in a stream. Correct the seasoning with salt and pepper. Mix 10 Sec./Speed 3.

Chicken cooking

In a non-stick pan, brown the marinated chicken breasts on each side. Let cool slightly then cut them into thin slices.

Salad assembly

In a salad bowl, mix 200 g of rocket with 100 g of shredded red cabbage, chopped Brazil nuts, and mango cubes. Finish with the marinated chicken slices. Season with mango vinaigrette.
