Description

This exotic salad with grilled chicken is a true journey of taste! I love the freshness of the cucumber combined with the sweetness of the papaya and the creaminess of the avocado. The chicken, marinated in lime juice and grilled, brings a gourmet and protein-rich touch. It's a perfect salad for a light and sunny lunch, or for a quick and tasty dinner. It is ideal for hot summer days and is prepared in no time. A real treat for the taste buds, and an excellent way to stock up on vitamins and exotic flavors!

Ingredients (11 ingredients)

  • 1 kg Chicken
  • 1 piece Cucumber
  • 2 piece Papaya
  • 2 piece Avocado
  • 3 piece Lime
  • 1 piece Lemon
  • 12 brin Coriander
  • 8 c. à soupe Olive oil
  • 1 c. à soupe Mustard
  • Salt
  • Pepper

Preparation (8 steps)

Chicken marinade

Thermomix® Setting
5 sec/Speed 3

Put 1 kg of chicken strips in a hollow dish. In the Thermomix bowl, pour the juice of 3 limes and 4 tbsp of olive oil. Mix 5 Sek./Stufe 3. Pour the marinade over the chicken and let marinate for 30 min.

Preparation of the papaya

Peel and seed 2 papayas. Cut the flesh into cubes and set aside.

Preparation of the cucumber

Wash 1 cucumber and cut it into large cubes and set aside.

Preparation of the avocado

Peel 2 avocados, remove the pits and cut the flesh into cubes and set aside.

Preparation of the vinaigrette

10 sec/Speed 4

In the Thermomix bowl, mix the rest of the olive oil (4 tbsp), the juice of one lemon, 1 tbsp of mustard, salt and pepper. Mix 10 Sek./Stufe 4.

Assembly of the salad

5 sec/Speed 2 Reverse

Add the papaya, avocado, cucumber and 12 sprigs of chopped coriander to the Thermomix bowl. Mix gently with the Linkslauf 5 Sek./Stufe 2. Set aside in the refrigerator.

Chicken cooking

Drain and wipe the chicken strips. Grill them for 7 min under the oven grill or under a cast iron grill.

Service

Divide the salad into serving plates and place the hot chicken strips on top. Serve immediately.
