Description

This dish of Asturian beans with rib and chorizo is a traditional Spanish stew, perfect for cold winter days. The fabas, some buttery white beans, are cooked over low heat with pork ribs, fresh chorizo and ham, creating a rich and tasty broth. The key is to soak the fabas the night before and cook them slowly so that they are tender and creamy. This dish is ideal to share with family or friends, and its flavor improves even more the next day. A comforting and flavorful dish!

Ingredients (8 ingredients)

  • 400 g Asturian beans
  • 400 g Pork ribs
  • 2 piece Fresh chorizo
  • 1 piece Ham hock
  • 3 clove Garlic
  • 1 piece Onion
  • 2 hojas Bay leaf
  • 2.5 l Water

Soaking the beans

Place the Asturian beans in a large container with plenty of water and soak for at least 12 hours.

Cooking the ribs

20 min/212°F/Speed 1 100

Drain the pork ribs and place them in the Thermomix bowl. Cover with water and add salt. Program 20 min/100°C/Speed 1 to remove excess fat. Drain the ribs and reserve.

Preparation of the sofrito

Peel the onion and garlic cloves. Place the onion in quarters and the garlic cloves in the Thermomix bowl. Program 3 sec./Speed 5 to chop. Lower the remains of the walls of the glass with the spatula.

Sofrito

Add the cooked and drained ribs, the ham hock, the fresh chorizos, the bay leaves and the drained beans to the Thermomix bowl. Add the water.

Cooking the beans

Thermomix® Setting
120 min/208°F/Gentle stir speed 98 Reverse

Program 120 min/98°C/Reverse direction/Spoon speed. During cooking, when the stew boils, remove the foam that may form. Also, so that they do not peel, add 30 ml of cold water to cut the boil three times during cooking.

Serve

Once finished, remove the onion, garlic cloves and bay leaf. Cut the ribs, separating them to serve proportionate portions. Serve hot.
