  • 2 cups steel-cut oats
  • 0.5 cups firmly packed light brown sugar
  • 1.5 tbsp ground cinnamon
  • 0.75 tsp ground nutmeg
  • 1 cups canned pumpkin
  • 6 cups water
  • 1 cups fat-free half-and-half
  • 1 cups raisins
  • 1 tsp vanilla extract
  • 2 tbsp firmly packed light brown sugar
  • 2 tsp firmly packed light brown sugar
  • 5 tbsp chopped walnuts
  • 1 tsp chopped walnuts

Preparation (7 steps)

Prepare the slow cooker

Lightly spray a small slow cooker with cooking spray to prevent sticking. This step ensures easy cleanup later.

Combine dry ingredients

Add 2 cups steel-cut oats, ½ cup firmly packed light brown sugar, 1 ½ tablespoons ground cinnamon, and ¾ teaspoon ground nutmeg to the Thermomix bowl. Mix for 10 Sec./Stufe 3 to combine the dry ingredients evenly.

Add wet ingredients and mix

20 sec/Speed 2

Add 1 cup canned pumpkin, 6 cups water, and 1 cup fat-free half-and-half to the Thermomix bowl. Also add 1 cup raisins and 1 teaspoon vanilla extract. Mix for 20 Sec./Stufe 2 to combine all ingredients.

Transfer to slow cooker

Carefully ladle the oat mixture from the Thermomix bowl into the prepared slow cooker. Ensure even distribution.

Slow cook the oatmeal

Cover the slow cooker and cook on Low for 450 to 510 minutes (7 1/2 to 8 1/2 hours), or until the oats are soft and creamy. Check occasionally to ensure it's not sticking.

Prepare toppings in Thermomix

Add 5 tablespoons chopped walnuts and 1 teaspoon chopped walnuts to the Thermomix bowl. Add 2 tablespoons firmly packed light brown sugar and 2 teaspoons firmly packed light brown sugar. Mix for 5 Sec./Stufe 3 to combine the toppings.

Serve and garnish

Sprinkle the prepared brown sugar and walnut mixture over the oatmeal in the slow cooker before serving. Serve warm.
