Description

This recipe for fried pork liver in red wine sauce is a hearty main course, ideal for the autumn season. The liver is fried in the pan and then cooked to perfection in an aromatic red wine sauce in the Thermomix®. Onions, celery and spices create a tasty sauce that goes perfectly with the tender liver. The preparation time is about 45 minutes and is enough for 4 servings.

Ingredients (14 ingredients)

  • 600 g Pork liver
  • 250 g Onions
  • 100 g Celery
  • 40 g Clarified butter
  • 20 g Tomato paste
  • 1 EL Flour
  • 200 ml Red wine
  • 200 ml Meat broth
  • 1 Stück Bay leaf
  • 0.5 TL Thyme
  • 0.5 TL Marjoram
  • Salt
  • Pepper
  • Balsamic vinegar

Preparation (9 steps)

Chop onions and celery

Put 250g onions and 100g celery in coarse pieces into the mixing bowl and chop for 5 sec./level 5. If necessary, use the spatula to push down from the edge.

Sauté the vegetables

Add 40g clarified butter to the chopped onions and celery in the mixing bowl and sauté for 3 min./120°C/level 1.

Add tomato paste and flour

Thermomix® Setting
1 min/248°F/Speed 1 248°F

Add 20g tomato paste and 1 tbsp flour and sauté for 1 min./120°C/level 1.

Deglaze with liquid

Deglaze with 200 ml red wine and 200 ml meat broth. Add 1 bay leaf, 1/2 tsp thyme, 1/2 tsp marjoram, salt and pepper to taste.

Simmer the sauce

Attach the measuring cup and simmer the sauce for 20 min./100°C/level 1.

Prepare the liver

While the sauce is simmering, cut the 600g pork liver into approx. 1 cm thick slices and season with salt and pepper.

Fry the liver

Fry the pork liver in a separate pan with a little clarified butter on both sides. The liver should still be slightly pink inside.

Add liver to sauce

Add the fried liver to the sauce in the mixing bowl and let it steep for 5 min./90°C/reverse rotation level 1. Leave the measuring cup on.

Season the sauce

Season the sauce with salt, pepper and possibly a little balsamic vinegar. Remove bay leaf.
