Description

This festive berry cake with cream cheese frosting is an absolute eye-catcher on every birthday table! I especially like to make it in the summer when the berries come fresh from the market. The combination of fluffy sponge cake, creamy cream cheese filling and fruity berries is simply unbeatable. The preparation is a bit more complex, but the result is worth it. The cake can be prepared well in advance and still tastes delicious the next day. A real treat for all those with a sweet tooth!

Ingredients (12 ingredients)

  • 6 piece Eggs (Gr. M)
  • 2 Pck. Vanilla sugar
  • 150 g Sugar
  • 60 g Cornstarch
  • 90 g Flour
  • 100 g Butter
  • 150 g Powdered sugar
  • 800 g Double cream cream cheese
  • 4 tbsp Whipping cream
  • 100 g Raspberries
  • 200 g Berries
  • 25 g Chocolate sprinkles

Preparation (10 steps)

Separate eggs and beat egg whites

Thermomix® Setting

Separate eggs. Place egg whites in the mixing bowl and whisk with vanilla sugar and sugar for 3 min./speed 4 with the butterfly until stiff. Add egg yolks and stir in for 10 sec./speed 3.

Mix and fold in flour and starch

Thermomix® Setting
10 sec/Speed 2

Mix cornstarch and flour. Add the mixture to the mixing bowl and fold in for 10 sec./speed 2. Line the bottom of two springform pans (18 + 26 cm Ø) with baking paper.

Bake sponge cake

Spread the sponge cake mixture into the prepared springform pans and smooth it out. Bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for about 15 minutes. Remove, turn out onto a cake rack, peel off the baking paper and let the bases cool down. (This step takes place outside the Thermomix)

Prepare buttercream

Put butter and 50 g powdered sugar in the mixing bowl and stir until creamy for 1 min./speed 4.

Prepare cream cheese frosting

Thermomix® Setting

Put double cream cream cheese, whipping cream and 100 g powdered sugar in the mixing bowl and stir until creamy for 30 sec./speed 3.

Prepare raspberry puree

Thermomix® Setting
20 sec/Speed 8

Sort the raspberries, wash them and drain them well. Put raspberries in the mixing bowl and puree for 20 sec./speed 8.

Prepare raspberry cream cheese frosting

Thermomix® Setting
15 sec/Speed 3

Add the whipped butter and raspberry puree to the cream cheese frosting in the mixing bowl and stir in for 15 sec./speed 3.

Layer the cake

Halve the sponge cake bases horizontally. Spread about half of the cream on the lower bases, smooth it out, place the upper bases on top. Coat cakes with the remaining cream. Place the small cake in the middle on the large cake. (This step takes place outside the Thermomix)

Chill the cake

Refrigerate cake for about 2 hours. (This step takes place outside the Thermomix)

Decorate the cake

Sort the berries, wash them and drain them well. Garnish the cake with berries and chocolate sprinkles. (This step takes place outside the Thermomix)
