Description

This festive cake railway is a real eye-catcher on every Christmas table! I have been making it since my childhood and it is always a hit, especially with the little ones. The juicy cake forms the basis for an imaginative decoration with icing, sweets and chocolate lentils. The preparation is a bit more complex, but the result is worth it. Ideal for a cozy Advent season or as a highlight at Christmas. Let your creativity run wild and create your own personal cake railway! The cake can be prepared well in advance, so you have more time for other things on the day of the celebration.

Ingredients (18 ingredients)

  • 150 g soft Butter or margarine
  • 150 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 pinch Salt
  • 0.5 piece grated zest of untreated Lemon
  • 3 piece Eggs (size M)
  • 200 g Flour
  • 1 geh. TL Baking powder
  • 30 g ground Almonds
  • 1 piece Egg white (size M)
  • 250 g Icing sugar
  • 1 tbsp Lemon juice
  • 1 Beutel Color-Rado mixture
  • 1 Beutel Liquorice confectionery
  • 1 piece Mini marshmallow
  • 1 einige Chocolate lentils
  • 4 piece Liquorice snails
  • 2 tbsp Icing sugar for dusting

Preparation (10 steps)

Mix butter, sugar and spices

Thermomix® Setting

Put 150 g soft butter or margarine, 150 g sugar, 1 pack vanilla sugar, 1 pinch of salt and the grated zest of ½ untreated lemon into the mixing bowl and mix for 2 min/speed 4.

Stir in eggs and flour

Add 3 eggs (size M) and 4 tbsp flour one after the other to the mixing bowl and stir in for 1 min/speed 3.

Add remaining ingredients

Add 200 g flour, 1 heaped tsp baking powder and 30 g ground almonds to the mixing bowl and stir in for 30 sec/speed 3.

Bake the dough

Spread the dough in a greased springform pan (26 cm Ø) dusted with flour and bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 20 minutes. Leave to cool in the tin for approx. 2 hours.

Cut the cake

Remove the cake from the tin and cut off the curves to create a square (use the cut-off corners for other purposes; e.g. snacking). Cut the square into 3 strips and then halve them.

Shape the locomotive

Halve one piece again. Cut a large piece to a point at one end for the locomotive.

Prepare the icing

20 sec/Speed 4

Put 1 egg white (size M), 250 g icing sugar and 1 tbsp lemon juice into the mixing bowl and mix for 20 sec/speed 4 to a smooth, thick icing. Fill into a piping bag with a small nozzle.

Glue and decorate the railway

First glue the locomotive together with icing. Then glue round liquorice confectionery as wheels under the locomotive, the wagons and the coal wagon. Glue a mini marshmallow as a chimney and halved, square liquorice confectionery as a plow to the locomotive. Stick chocolate lentils on as windows. Decorate the chimney and roof of the locomotive with icing. Glue black or colorful liquorice sticks as coal onto the coal wagon and distribute e.g. gummy bears and frogs on the wagons.

Leave to dry and set up

Leave the railway to dry for at least 5 hours. Unroll liquorice snails and place them parallel on a solid surface (e.g. wooden board). Place filled liquorice sticks in between as sleepers and carefully place the railway on the tracks.

Decorate

Dust with 1-2 tbsp icing sugar. If necessary, distribute small paper fir trees around it.
