Description

This festive roast beef with herb crust, prepared in the Thermomix®, is a hearty main course with roast beef, fresh herbs and beef stock. The recipe is particularly suitable for festive occasions such as Christmas or a winter Sunday lunch. The preparation takes about 200 minutes in total, of which 30 minutes are active working time. The recipe is designed for 8 servings and is ideal for the whole family.

Ingredients (13 ingredients)

  • 2000 g Roast beef
  • Salt
  • Pepper
  • 2 tbsp Native rapeseed oil
  • 600 ml Beef stock
  • 1 Bd. Chives
  • 0.5 Bd. Thyme
  • 1 Bd. Parsley
  • 1 Handvoll Basil leaves
  • 100 g Sweet cream butter
  • 2 Egg yolk
  • 7 tbsp Breadcrumbs
  • 2 tbsp Medium-hot mustard

Preparation (8 steps)

Prepare roast beef

Pat the roast beef dry with kitchen paper and then season with salt and pepper. The meat should be well seasoned all around.

Sear roast beef

Heat 2 tablespoons of rapeseed oil in a pan. Sear the roast beef in it from all sides until it has a nice crust. The searing is NOT done in the Thermomix.

Braise roast beef

Place the seared roast beef in a baking dish. Pour in 600 ml of beef stock. Cover the baking dish with a lid or aluminum foil and braise in a preheated oven at 180°C top/bottom heat for approx. 140 minutes.

Prepare herbs

Wash the chives, thyme, parsley and basil leaves and shake dry. Then chop coarsely.

Chop herbs

Put the prepared herbs into the mixing bowl and chop for 5 sec./level 5. If necessary, use the spatula to push down from the edge and repeat the process.

Prepare herb mixture

20 sec/Speed 3

Add 100 g sweet cream butter, 2 egg yolks, 7 tablespoons breadcrumbs and 2 tablespoons mustard to the chopped herbs in the mixing bowl. Season with salt and pepper and mix for 20 sec./level 3.

Apply and gratinate herb crust

Remove the roast from the oven and spread the herb mixture evenly over the meat. Set the oven to grill function and bake the roast for another 10 minutes until the crust is golden brown.

Resting time

Remove the gratinéed roast from the oven and let it rest for 15 minutes before slicing.
