Description

This hearty roast pork with dumplings and cream savoy cabbage is a real Sunday dinner! I especially like to make it in autumn and winter when it's cold outside. The roast becomes nice and juicy and the crust crispy. The dumplings with plum filling are a great surprise and the cream savoy cabbage goes perfectly with it. A dish that the whole family loves and that is also suitable for festive occasions. If you like, you can prepare the roast the day before and cut it just before serving.

Ingredients (19 ingredients)

  • 1 Zweig Rosemary
  • 0.25 bunch Parsley
  • 2 tbsp Mustard
  • Salt
  • Pepper
  • 2 kg Pork rind roast
  • 1 tbsp Caraway seeds
  • 1 Möhre Carrot
  • 1 Spalt Celeriac
  • 3 Zwiebeln Onions
  • 1.5 kg Savoy cabbage
  • 50 g Mixed rye bread
  • 3 tbsp Butter
  • 750 g Dumpling dough
  • 8 Soft-Pflaumen Soft plums
  • Freshly grated nutmeg
  • 250 g Whipping cream
  • 200 ml Vegetable broth
  • Oil for the roasting pan

Prepare herbs and prepare marinade

Wash rosemary and parsley, shake dry, pluck leaves or needles from the stems or branch. Put herbs in the mixing bowl and chop for 5 seconds/speed 5. Add mustard, salt and pepper and mix for 10 seconds/speed 3. Transfer the marinade.

Prepare roast

Pat the roast dry. Cut the rind into a diamond shape with a sharp knife or cutter. Spread the meat side of the roast with the prepared mustard marinade. Place the roast with the meat side down in a roasting pan greased with oil. Rub the rind with caraway seeds and 1–2 teaspoons of salt. Make sure that the cuts are especially seasoned.

Cook roast

Cook the roast in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for about 2 1/2 hours.

Prepare vegetables

Peel and roughly dice the carrot and celery. Peel 2 onions and cut into wedges.

Add vegetables to the roast

After about 1 hour, distribute the prepared vegetables around the roast. 30 minutes later, pour in 400 ml of water. Increase the temperature (electric oven: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) and cook for another 20 minutes.

Prepare savoy cabbage

Clean the savoy cabbage, quarter it and cut out the stalk. Cut the savoy cabbage quarters into strips and wash.

Roast bread cubes

Cut the bread into cubes. Heat 1 tablespoon of butter in a pan and roast the bread cubes in it until golden brown, remove.

Shape dumplings

Knead the potato dough once in a bowl. Divide the dough into 8 portions. Shape dumplings, adding a plum and several bread cubes to the middle of each.

Cook dumplings

Bring plenty of salted water to a boil in a large saucepan. Add dumplings. Let it simmer in it over a mild heat for 20–25 minutes.

Chop onions

Peel, quarter and place 1 onion in the mixing bowl. Chop for 3 seconds/speed 5. Push down with the spatula.

Sauté savoy cabbage

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tablespoons of butter to the onions in the mixing bowl and sauté for 3 minutes/120°C/speed 1. Add savoy cabbage and sauté for 5 minutes/120°C/speed 1.

Simmer savoy cabbage

Thermomix® Setting
10 min/212°F/Speed 1 100 Reverse

Season the savoy cabbage with salt, pepper and nutmeg. Add cream and broth and stir in for 10 minutes/100°C/speed 1 reverse. Let the savoy cabbage simmer over low heat for about 5 minutes and season again.

Cut the roast into slices and arrange on plates with gravy, dumplings and savoy cabbage.
