Description

This festive turkey roast with cranberry sauce, prepared in the Thermomix®, is a hearty main course for special occasions. Main ingredients are turkey, lemon, onion and fresh herbs such as parsley, thyme and rosemary. The preparation takes about 220 minutes, of which 60 minutes are active working time. The recipe is designed for 8 servings and is ideal as a family meal or for a festive Christmas menu.

Ingredients (15 ingredients)

  • 1 piece ready-to-cook turkey (approx. 6-7 kg)
  • Olive oil
  • 1 piece Organic lemon
  • 1 piece Onion
  • 2 Zweig(e) Flat-leaf parsley
  • 2 Zweig(e) Thyme
  • 2 Zweig(e) Rosemary
  • 2 Zweig(e) Sage
  • 1 tsp Sea salt
  • 1 tsp Pepper
  • 4 Pck. Potato dumplings
  • 200 g Cranberries (jar)
  • 750 ml Vegetable stock
  • 125 ml Port wine
  • 2.5 tbsp Cornstarch

Preparation (6 steps)

Prepare lemons, onions and herbs

Wash the lemon and quarter it. Peel and quarter the onion. Wash the parsley, thyme, rosemary and sage and shake dry carefully.

Season and stuff turkey

Rub the turkey inside and out with 1 tsp sea salt and 1 tsp pepper. Then stuff the turkey with three onion quarters, the lemon quarters and the herbs.

Close and prepare turkey

Close the opening of the turkey with toothpicks and tie the legs together with kitchen twine. Close the front opening (neck) with the remaining onion quarter. Press the wings under the turkey. Brush the top of the turkey with olive oil, then place it breast-side down in a sufficiently large roasting pan and now also brush the bottom with olive oil.

Prepare cranberry sauce

Put 750 ml vegetable stock, 125 ml port wine and 200 g cranberries into the mixing bowl and stir for 10 sec./speed 3.

Cook cranberry sauce

Close the mixing bowl and cook the cranberry sauce for 15 min./100°C/speed 1.

Thicken cranberry sauce

Stir 2.5 tbsp cornstarch with 6-8 tbsp water in a bowl until smooth. Add the cornstarch mixture to the mixing bowl and stir in for 3 min./100°C/speed 2 so that the sauce thickens slightly. Season with salt and pepper.

The turkey roast, a classic that has tradition in my family. Every year at Christmas it is on the table, and the anticipation for it begins weeks in advance. Originally, the recipe comes from my grandmother, who always prepared it with a lot of love and patience. With the Thermomix® the preparation is now much easier and faster, without affecting the taste. The turkey itself is of course the star of the dish. A good specimen should be juicy and of good quality. The lemon, onion and fresh herbs such as parsley, thyme, rosemary and sage play an important role in flavoring the meat. They give the turkey a fresh, spicy note and make sure that it does not become too dry. The sea salt and pepper are the basic seasoning that emphasizes the inherent taste of the turkey. When preparing in the Thermomix® it is important to follow the order of the steps exactly. The cranberry sauce is prepared first so that it can infuse during the cooking time of the turkey. The vegetable stock forms the basis of the sauce, while the port wine gives it a special depth and sweetness. The cranberries provide a fruity acidity that harmonizes perfectly with the hearty turkey. The cornstarch is used to bind the sauce and give it a creamy consistency. Make sure to stir the cornstarch lump-free before adding it to the mixing bowl. For a vegetarian version, you could replace the turkey with a large, stuffed pumpkin. Rice, nuts, mushrooms and vegetables, for example, are suitable as a filling. Instead of the cranberry sauce, you could prepare a mushroom cream sauce. If you like it a bit more exotic, you can refine the turkey with other spices such as curry, ginger or chili. Serve the turkey roast with classic side dishes such as potato dumplings, red cabbage and Brussels sprouts. A fresh salad also goes well with it. The cranberry sauce should of course not be missing. A dry red wine or a strong beer round off the meal. Leftovers of the turkey roast can be stored in the refrigerator and reheated the next day. They are also ideal for preparing sandwiches or salads. The cranberry sauce can also be stored in the refrigerator and served with other dishes. The turkey can also be prepared well in advance. You can season and fill it the day before and then let it infuse in the refrigerator overnight. This allows it to absorb the flavors better.
