Description

This marzipan apricot cake is a real eye-catcher on any festive table! The juicy sponge base, combined with the fruity apricot jam and delicate marzipan, results in a harmonious taste experience. The dominoes as decoration make the cake something special. I particularly like to bake this cake for Christmas or birthdays. It can be prepared well in advance and still tastes delicious the next day. An absolute highlight for all lovers of marzipan and fruity cakes!

Ingredients (14 ingredients)

  • 6 piece Eggs
  • 200 g Sugar
  • 1 Pck. Bourbon vanilla sugar
  • 200 g Wheat flour Type 405
  • 1 Pck. Baking powder
  • 1 Prise(n) Salt
  • 2 tbsp Cocoa powder
  • 1 tsp Gingerbread spice
  • 400 g Marzipan raw material
  • 1 Dose(n) Canned apricots
  • 450 g Apricot jam
  • 2 Tütchen Agar Agar
  • 2 container Dark cake glaze (à 150 g)
  • 6 piece Dominosteine

Preparation (12 steps)

Separate eggs and beat egg yolks

Separate eggs. Add egg yolks, some water, sugar and vanilla sugar to the mixing bowl and beat until frothy for 3 min./speed 4.

Whisk egg whites until stiff

Whisk egg whites in a separate bowl until stiff and carefully fold into the egg yolk mixture.

Mix and fold in dry ingredients

Mix flour, baking powder, salt, cocoa powder and gingerbread spice in a separate bowl. Then carefully fold into the egg mixture.

Bake dough

Preheat the oven to 180 °C top/bottom heat and line a springform pan with baking paper. Pour in the batter and bake for approx. 30 minutes. Allow to cool and cut horizontally twice.

Roll out marzipan

Divide the marzipan raw material into two parts, roll each out to the size of the springform pan and place one on the first base.

Puree apricots

Thermomix® Setting
20 sec/Speed 8

Drain the canned apricots and add them to the mixing bowl together with the apricot jam. Puree for 20 sec./speed 8.

Boil jam

Thermomix® Setting
5 min/212°F/Speed 2 100

Add agar agar and bring to a boil for 5 min./100°C/speed 2 while stirring.

Spread jam and cool

Spread half of the jam on the marzipan layer and place in the refrigerator for approx. 30 minutes.

Place cake base and marzipan

Place another cake base on top. Place the other marzipan layer on the base.

Spread jam and cool

Spread the remaining apricot mixture on the marzipan layer and place in the refrigerator again for 30 minutes.

Place cake base and prepare glaze

When the top layer is firm, place the third base on top. Heat the cake glaze according to the package instructions.

Glaze and decorate cake

Pour the liquid glaze over the cake. Let it cool slightly. Halve the dominoes diagonally and decorate the cake with them.
