Description

This apple marzipan cake is a true delight for the senses! The combination of juicy apple compote, creamy curd filling and a delicate marzipan coating makes it a special highlight on every coffee table. I especially like to bake this cake in autumn when the apples come fresh from the tree. The preparation is a little more complex, but the result is worth every effort. The cake is perfect for birthdays, Christmas or just to spoil yourself and your loved ones. An absolute must for all cake lovers!

Ingredients (22 ingredients)

  • 6 piece Eggs (Size M)
  • 175 g Sugar
  • 5 tbsp Sugar
  • 3 Pck. Vanilla sugar
  • 250 g Ground almonds (without skin)
  • 65 g Cornstarch
  • 600 g Sour apples
  • 3 piece Sour apples
  • 2 tbsp Lemon juice
  • 2 tbsp Butter
  • 2 tbsp Chopped almonds
  • 150 ml Apple juice
  • 5 tbsp Apple juice
  • 1 packet Vanilla pudding powder
  • 500 g Curd cheese
  • 1 piece Organic lemon (grated peel)
  • 400 g Whipping cream
  • 1 Pck. Cream stiffener
  • 300 g Marzipan cover
  • 2 tbsp Cocoa
  • 75 g Almond flakes
  • Baking paper

Preparation (12 steps)

Beat eggs, sugar and vanilla sugar

Thermomix® Setting
4 min/Speed 4

Put 6 eggs, 175 g sugar and 2 packets of vanilla sugar into the mixing bowl and beat for 4 min./speed 4 until fluffy.

Mix and stir in almonds and starch

Thermomix® Setting
10 sec/Speed 3

Put 250 g ground almonds and 65 g cornstarch into the mixing bowl and stir in for 10 sec./speed 3.

Bake dough

Spread the dough in a springform pan (26 cm Ø) lined with baking paper and bake in a preheated oven at 180°C (top/bottom heat) for 35-40 minutes. Remove and let cool for about 10 minutes. Remove from the mold and let cool.

Prepare apples

Quarter, peel, core and finely dice 3 apples. Mix with 2 tbsp lemon juice.

Prepare roasted apple compote

Thermomix® Setting
5 min/248°F/Speed 1 120

Put 2 tbsp butter in the mixing bowl and melt for 3 min./120°C/speed 1. Add apples and 2 tbsp chopped almonds and sauté for 5 min./120°C/speed 1. Pour in 150 ml apple juice and bring to the boil for 1 min./100°C/speed 1.

Stir in pudding powder

Thermomix® Setting
1 min/212°F/Speed 2 100

In a bowl, stir 1 packet of vanilla pudding powder, 2 tbsp sugar and 5 tbsp apple juice until smooth. Add to the mixing bowl and stir in for 1 min./100°C/speed 2 and simmer for about 1 minute. Let cool slightly.

Prepare curd cream

Thermomix® Setting
20 sec/Speed 3

Put 500 g curd cheese, grated zest of 1 organic lemon and 3 tbsp sugar into the mixing bowl and stir for 20 sec./speed 3.

Whip cream

Thermomix® Setting
2 min/Speed 3.5

Put 200 g cream, 1 packet of vanilla sugar and 1 packet of cream stiffener into the mixing bowl and whip until stiff with the butterfly for 2 min./speed 3.5. Fold the cream into the curd.

Layer the cake

Divide the base once. Place a cake ring around the bottom base. Spread the compote on top. Add the curd cream and spread carefully. Place the 2nd base on top.

Cover the cake with cream

Thermomix® Setting
2 min/Speed 3.5

Put 200 g cream in the mixing bowl and whip until stiff with the butterfly for 2 min./speed 3.5 and spread it all around the cake. Refrigerate the cake for at least 30 minutes.

Prepare marzipan cover

Knead 300 g marzipan cover and 2 tbsp cocoa. Roll out between 2 layers of baking paper into an oval plate (approx. 40 cm long) and place it on the cake as a wavy cover.

Decorate cake

Roast 75 g almond flakes in a pan without fat, let cool. Decorate the edge of the cake with it.
