Description

This festive cake with mascarpone cream and edible cake topper is a real eye-catcher at any birthday party! I always like to make it because it not only looks fantastic, but also tastes incredibly delicious. The fluffy sponge cake, the creamy filling and the fresh fruits harmonize perfectly with each other. The preparation is a bit more complex, but the result is worth it. Ideal for special occasions and anyone with a sweet tooth! The cake is rich and filling, so perfect for a larger group.

Ingredients (11 ingredients)

  • 1 piece sponge cake _24 cm in diameter_
  • 750 ml sweetened vegetable cream
  • 350 g mascarpone
  • 60 g icing sugar
  • 1 pinch vanillin
  • 1 q.b. strawberries _cubed_
  • 1 q.b. kiwi _cubed_
  • 1 q.b. pear juice _or other fruit juice_
  • 1 piece decorated wafer for cake
  • 1 q.b. neutral jelly _cold_
  • 1 q.b. colored chocolate confetti

Preparation (7 steps)

Prepare cream

Thermomix® Setting
3 min/Speed 3,5

Put 750 ml vegetable cream, 350 g mascarpone, 60 g icing sugar and a pinch of vanilla into the mixing bowl. Whip with the butterfly 3 min./speed 3.5 until creamy. Transfer the cream to a bowl and keep in the refrigerator until ready to use.

Prepare sponge cake

Cut a sponge cake (24 cm diameter) into 3 layers. Place the first layer on a cake plate and drizzle with some pear juice.

Fill first layer

Spread 3-4 tablespoons of the prepared cream on the first layer of sponge cake. Sprinkle strawberry cubes and kiwi cubes over it.

Fill second layer

Place the second layer of sponge cake on top, drizzle with pear juice and top with cream, strawberries and kiwi as in step 3.

Finish cake

Place the third layer of sponge cake on top and also drizzle with pear juice. Spread the remaining cream over the entire cake and smooth it out.

Prepare cake topper

Place the cake topper on a tray and generously coat with cold, neutral gelatin using a spatula. Turn the cake topper over and coat with gelatin again. Spread the gelatin evenly!

Decorate cake

Carefully remove the cake topper from the tray and place it in the center of the cake. Decorate with colorful chocolate lentils as desired and cover the edges of the cake topper.
