Description

These honey cake cookies are an absolute must during the Christmas season! The recipe comes from a dear neighbor and yields a huge amount - perfect if you have many hungry mouths to feed or simply want to have a supply of delicious cookies. The dough is a bit more elaborate to make, but the result is worth it. The spices and honey give the cookies an unmistakable taste. They are not only delicious, but also a real eye-catcher on every cookie plate. They taste best when they have been left to infuse for a few days.

Ingredients (10 ingredients)

  • 2 kg Flour plus some for rolling out
  • 500 g Margarine
  • 250 g Lard
  • 750 g Sugar
  • 1 kg Beet syrup
  • 20 g Potash
  • 1 piece Lemon(s)
  • 1 tsp Cinnamon
  • 1 Pck. Spice mixture gingerbread spice in 8 individual sachets
  • 1 Tasse/n Milk

Preparation (6 steps)

Melt fat, syrup and sugar

Put margarine, lard, sugar and beet syrup into the mixing bowl and melt while stirring for 8 min./50°C/speed 2 until the sugar has completely dissolved. Then transfer to a bowl and let cool.

Stir in flour

20 sec/Speed 4

Put half of the flour (1 kg) into the mixing bowl and stir in for 20 sec./speed 4.

Add spices and milk

Thermomix® Setting
30 sec/Speed 3

Dissolve potash, cinnamon and gingerbread spice in the milk. Put the milk mixture, the grated lemon zest and the lemon juice into the mixing bowl and stir for 30 sec./speed 3.

Knead in remaining flour

Thermomix® Setting
2 min/Kneading speed

Put the remaining flour (1 kg) into the mixing bowl and knead for 2 min./kneading stage to form a smooth dough.

Chill dough

Remove the dough from the mixing bowl, wrap in cling film and place in the refrigerator for approx. 1 to 2 hours.

Cut out and bake cookies

Take the dough out of the refrigerator in portions, roll out on a floured surface and cut out various shapes. Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 180°C for approx. 7 to 8 minutes.
