Description

This hearty festive day soup with celery, carrots, leek, onions and cooked sausage is prepared in the Thermomix®. The preparation of the soup takes about 60 minutes and yields 6 servings. Ideal as a warming appetizer or main course, especially in the cold season. The recipe is perfect for a festive family meal.

Ingredients (16 ingredients)

  • 200 g Celery
  • 200 g Carrots
  • 1 Stück Leek
  • 1 Stück Onion
  • 1 EL Oil
  • 1.5 l Water
  • 2 Stück Bouillon cubes
  • 200 g Cooked sausage
  • 2 Stück Smoked sausages
  • 2 Stück Chicken breast fillet
  • 1 Packung Egg custard
  • 1 Schuss Sherry
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Nutmeg
  • 1 Bund Parsley, chopped

Preparation (7 steps)

Prepare soup vegetables

Clean the celery, carrots and leek and cut into coarse pieces. Peel and halve the onion.

Chop soup vegetables

Put soup vegetables and onion into the mixing bowl and chop for 5 sec./level 5.

Sauté soup vegetables

Add oil and sauté for 3 min./120°C/level 1.

Prepare broth

Thermomix® Setting
15 min/212°F/Speed 1 212°F

Fill up with water and bouillon cubes and cook for 15 min./100°C/level 1.

Fry meat

Cut cooked sausage, smoked sausages and chicken breast fillet into bite-sized pieces. Fry meat in a separate pan.

Add meat and egg custard

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 212°F Reverse

Add fried meat, egg custard and sherry to the mixing bowl and heat for 5 min./100°C/Reverse rotation level 1.

Season and serve

Season with salt, pepper and nutmeg. Add chopped parsley before serving.
