Description

This chicken and fresh corn salad is an explosion of flavors and textures. The corn sautéed with spices gives it an exotic touch, while the grilled chicken provides the necessary protein for a complete meal. Perfect for a light lunch or a quick dinner on hot summer days. I prepare it often because it is very versatile: you can add avocado, cucumber or even some pieces of mango to give it an even fresher touch. The creamy goat cheese and the extra virgin olive oil dressing enhance all the flavors. A healthy and delicious option that always triumphs!

Ingredients (12 ingredients)

  • 1 piece Raw sweet corn cob
  • 0.25 tsp Hot paprika
  • 0.5 tsp Sweet paprika
  • 0.25 tsp Ground cumin
  • 0.25 tsp Ground coriander
  • 1 piece Chicken breast
  • 1 piece Small oak leaf lettuce
  • 3 piece Pear tomato
  • 30 g Soft goat cheese
  • Extra virgin olive oil
  • Salt
  • Ground black pepper

Preparation (7 steps)

Preparation of the corn

Remove the leaves and filaments from the corn cob. Cut the base and tip if necessary. Wash and dry gently. Paint the corn cob with extra virgin olive oil.

Cooking the corn on the griddle

Heat a griddle or grill over medium-high heat. Cook the corn cob with a pinch of salt, turning it from time to time, so that it browns well on all sides. Make sure the temperature is not too high so it doesn't burn. It will take about 15-20 minutes. Remove and let cool slightly.

Extraction of the corn kernels

Remove the corn kernels by making straight cuts with a good knife, vertically, leaving the stem clean.

Sautéing the corn with spices

Put the corn kernels in the Thermomix glass. Add 1/4 tsp of hot paprika, 1/2 tsp of sweet paprika, 1/4 tsp of ground cumin, 1/4 tsp of ground coriander, salt and ground black pepper to taste. Add a little extra virgin olive oil.

Preparation of the chicken

Cut the chicken breast into thin strips. Heat a pan with a little extra virgin olive oil and cook the chicken until it is golden brown and completely cooked.

Preparation of the salad

Wash the small oak leaf lettuce well and drain it. Wash and chop the pear tomatoes into small pieces.

Assembly of the salad

Place a base of well-drained lettuce leaves in a bowl. Distribute the sautéed corn, chopped tomato and grilled chicken. Add the crumbled soft goat cheese. Season with extra virgin olive oil, salt and ground black pepper to taste.
