Description

This Thermomix® recipe for beef fillet in puff pastry with mushroom filling is a hearty main course with mushrooms, shallots and fresh puff pastry. Preparation takes about 60 minutes and yields 4 servings. Ideal for festive occasions, wintertime or as a special family meal. Thanks to the simple preparation in the Thermomix®, the dish is guaranteed to succeed.

Ingredients (16 ingredients)

  • 10 Stück Mushrooms (large)
  • 3 Stück Shallots
  • 5 EL Rapeseed oil
  • 10 g Parsley
  • 2 EL Breadcrumbs
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 Pck. Puff pastry (fresh, refrigerated section)
  • 4 Stück Beef fillet steaks (approx. 180 g each)
  • 1 Stück Egg yolk
  • 2 EL Whipped cream (lactose-free if necessary)
  • 30 g Gouda
  • 400 ml Beef stock
  • 4 EL Balsamic vinegar
  • 1 EL Cornstarch
  • nach Geschmack Italian herbs (dried)

Preparation (15 steps)

Prepare the mushrooms

Thermomix® Setting

Clean the mushrooms. Remove the stems from 4 mushrooms. Place the remaining mushrooms and stems in the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Chop the shallots

Thermomix® Setting
3 sec/Speed 5

Peel the shallots, place in the mixing bowl and chop for 3 sec./speed 5. Scrape down the sides with the spatula.

Sauté the shallots and mushrooms

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp rapeseed oil to the shallots in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop the parsley

3 sec/Speed 8

Wash the parsley, shake dry, place in the mixing bowl and chop for 3 sec./speed 8. Scrape down the sides with the spatula.

Mix the mushroom mixture

Add the chopped parsley, breadcrumbs and the previously chopped mushrooms to the sautéed shallots in the mixing bowl. Season with salt and pepper and mix for 10 sec./Reverse/speed 2. Transfer and set aside.

Sear the fillet steaks

Remove the puff pastry from the refrigerator. Heat 2 tbsp oil in a pan. Season the fillets with salt and sear vigorously on each side for about 2 minutes. Remove from the pan and let cool briefly.

Prepare the fillet

Cut the puff pastry into 4 squares. Place 2 tbsp of the mushroom mixture in the middle of each square. Place the fillet on top and add 2 tbsp of the mushroom mixture on top.

Seal the puff pastry

In a small bowl, whisk together the egg yolk and cream and brush the edges of the dough with it. Fold up the dough packages and place on a baking sheet lined with baking paper with the "seam side" down. Brush the packages with the egg mixture.

Bake the fillet in the oven

Bake in a preheated oven (200 °C convection) for approx. 20 - 25 minutes.

Prepare mushroom filling

Fill the 4 mushroom caps with the remaining mushroom mixture. Grate the cheese and sprinkle over the mushrooms.

Bake mushrooms

Add the mushrooms to the meat about 15 minutes before the end of the cooking time.

Prepare the sauce

Heat the pan in which the meat was fried and deglaze it with beef stock and vinegar. Place everything in the mixing bowl and bring to a boil for 5 min./100°C/speed 1.

Thicken the sauce

Mix the cornstarch with 3 tbsp of water, add to the mixing bowl and cook for 2 min./100°C/speed 2.

Season the sauce

Season the sauce with the Italian herbs, salt and pepper and stir for 5 sec./speed 3.

Serve

Arrange the meat with the mushrooms and drizzle with the sauce.
