Description

This recipe combines tender salmon with a hearty creamed savoy cabbage lentil vegetable. Preparation takes about 45 minutes and yields 2 servings. Ideal as a main course for a healthy and hearty lunch or dinner. The salmon is pan-fried while the vegetables are prepared in the Thermomix®.

Ingredients (14 ingredients)

  • 150 g Mountain lentils
  • Salt
  • 400 g Savoy cabbage
  • 1 Stück small Onion
  • 10 g Ginger
  • 2 EL Rapeseed oil
  • 2 TL Butter
  • 1 TL Curry powder
  • 50 ml Unsweetened apple juice
  • 200 ml Vegetable broth
  • 50 g Cream
  • Pepper from the mill
  • 2 Stück Wild salmon fillets
  • 0.5 Bund Chives

Preparation (10 steps)

Cook lentils

Cook 150 g mountain lentils in boiling water for 20 to 25 minutes, adding salt towards the end of the cooking time. Pour the lentils into a sieve and let them drain.

Prepare savoy cabbage

Clean, wash, and cut 400 g savoy cabbage into strips about 1 cm wide. Peel and finely dice 1 small onion and 10 g ginger.

Chop onion and ginger

Place 1 small onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté onion, ginger and savoy cabbage

Add 1 tbsp rapeseed oil and 2 tsp butter to the mixing bowl, sauté onion, ginger, and savoy cabbage in it for 2 to 3 minutes, sprinkle with 1 tsp curry powder. 3 Min./120°C/speed 1.

Simmer savoy cabbage lentils

Deglaze with 50 ml unsweetened apple juice and 200 ml vegetable broth and simmer, covered, over medium heat for about 10 minutes. 10 Min./100°C/speed 1.

Add cream and lentils

Pour in 50 g cream, mix in the lentils and cook everything for another 5 minutes. 5 Min./90°C/gentle stir setting/reverse.

Season savoy cabbage lentils

Season the savoy cabbage lentils with salt and pepper from the mill and keep warm, covered.

Fry salmon

Wash 2 wild salmon fillets (approx. 125 g each; without skin), pat dry and season with salt and pepper. Heat the remaining 1 tbsp rapeseed oil in a pan and fry the salmon in it over medium heat for 2 to 3 minutes on each side.

Prepare chives

Meanwhile, wash 1/2 bunch of chives, shake dry, cut into fine rolls and mix half of them into the savoy cabbage lentils.

Arrange

Arrange the lentils with the salmon and sprinkle with the remaining chives. Mashed potatoes go well with this.
