Description

This Thermomix® recipe for beef fillet in puff pastry crust is a hearty main course with beef fillet, shallots, mushrooms and Madeira. Preparation takes about 90 minutes and yields 4 servings. Ideal for festive occasions and lovers of hearty cuisine. The recipe is not low-carb, vegan or high in protein.

Ingredients (14 ingredients)

  • 2 Stück Shallots
  • 500 g Mushrooms
  • 2 EL Butter
  • 3 EL Madeira (Portuguese liqueur wine; alternatively, use white grape juice instead)
  • Salt
  • Pepper
  • 1 EL Chopped parsley
  • 750 g Beef fillet in one piece
  • 2 EL Clarified butter
  • 1 EL Mustard (medium hot)
  • 2 Pck. Puff pastry (à approx. 275 g)
  • Flour for working
  • 100 g Raw ham in thin slices (e.g. Serrano or Parma)
  • 1 Stück Egg yolk for brushing

Prepare shallots and mushrooms

Thermomix® Setting

Peel the shallots and place in the mixing bowl. Chop for 3 sec./speed 5. Scrape down with the spatula. Clean, finely chop the mushrooms and add to the shallots in the mixing bowl. Add butter and sauté for 3 min./120°C/speed 1.

Prepare mushroom mixture

Thermomix® Setting
10 min/212°F/Gentle stir speed/Linkslauf 212°F Reverse

Pour in Madeira, salt and pepper the mushrooms. Cook for 10 min./100°C/gentle stir setting/reverse rotation without measuring cup until the liquid has evaporated. Add chopped parsley and stir in for 5 sec./speed 2/reverse rotation. Let the mixture cool.

Preheat oven

Preheat oven to 200 degrees (convection: 180 degrees). Line a baking sheet with baking paper.

Sear the beef fillet

Salt and pepper the beef fillet and sear all over in clarified butter in a separate pan. Let the meat cool slightly, pat dry and brush all over with mustard.

Prepare puff pastry

Roll out both puff pastry sheets on a floured surface to a rectangular shape approx. 3 mm thick. Cut one sheet of dough in the middle with a knife in a grid pattern, pull apart slightly. Place the second layer of dough on the grid plate. Spread ham and mushroom mixture on top.

Wrap the fillet

Place the fillet on one long side of the dough, wrap in the dough. Press the edges of the dough together well. Place the wrapped fillet on the baking sheet, brush with egg yolk and bake in the preheated oven for approx. 25 minutes. Remove and let rest for approx. 10 minutes before serving.
