About this recipe

Filled pretzels are a wonderful memory of my childhood for me. My grandma always prepared them for birthdays or family celebrations. Of course, not in the Thermomix®, which didn't exist back then, but the taste is simply unforgettable. This recipe is a tribute to her culinary skills, modernized for quick and easy preparation with the Thermomix®. The base for the savory taste is the ground meat. I prefer to use mixed ground meat because it is juicier due to the higher fat content. The onion and garlic provide the aromatic base, while bell peppers, carrots, and celery add a pleasant sweetness and texture. The tomato paste intensifies the taste and the strained tomatoes form the basis for the sauce. Oregano and mustard round off the whole thing and give the filling a special touch. The cheese, ideally a mixture of mozzarella and Gouda, ensures the perfect crust and melting pleasure. When preparing it in the Thermomix®, it is important not to chop the onion and garlic too finely, otherwise they may burn. Sautéing in oil is crucial to release the aromas. Searing the ground meat in a separate pan prevents it from crumbling too much in the Thermomix®. The WunderSlicer V2 from Wundermix is a fantastic help to chop the vegetables quickly and evenly. Alternatively, you can also chop the vegetables in the Thermomix®, but be careful not to turn it into mush. When simmering the sauce, it is important to activate the reverse, so that the ingredients are not chopped. For a vegetarian version, you can replace the ground meat with lentils or soy granules. If you like it vegan, you can also replace the cheese with a vegan alternative. Feel free to experiment with other spices such as paprika powder, chili, or caraway to give the filling a personal touch. Serve the filled pretzels as a savory snack at a party or as a main course with a fresh salad. A dip of herb curd or sour cream goes perfectly with it. The filled pretzels taste best fresh from the oven. Leftovers can be stored in the refrigerator and reheated the next day. The filling can also be prepared well in advance and stored in the refrigerator. This saves you time if you want to prepare the pretzels spontaneously.
