Description

Savory breadsticks with cheese and ham are a hearty snack from the Thermomix®, ideal for parties or as finger food. The recipe is based on wheat flour, yeast, diced ham, and Gouda. Preparation takes about 90 minutes and yields 6 servings. Suitable as a savory side dish, appetizer, or small main course for the whole family.

  • 500 g Wheat flour Type 405
  • 42 g fresh Yeast
  • 1 tbsp Sugar
  • 250 ml Water
  • 1 tbsp Olive oil
  • to taste Salt
  • 375 g diced Ham
  • 375 g grated Gouda cheese
  • 500 g Sour cream
  • 1 piece Lemon
  • to taste Pepper
  • 1 bunch Chives
  • 0.5 bunch Scallions

Preparation (10 steps)

Prepare yeast pre-dough

Put 500 g wheat flour Type 405 in a bowl and press a well in the middle. Crumble in 42 g fresh yeast, add 1 tbsp sugar and mix with some of 250 ml water and flour from the edge to form a pre-dough. Cover and let rise in a warm place for about 15 minutes.

Knead yeast dough

Put remaining water (from 250 ml), 1 tbsp olive oil and salt in the mixing bowl. Add the pre-dough and knead for 2 min./kneading level to form a smooth yeast dough.

Let the yeast dough rise

Cover the yeast dough and let it rise in the oven at 50 °C for about 30 minutes.

Fry ham

Fry 375 g diced ham in a pan without oil until crispy and then let cool.

Portion and top the dough

Knead the yeast dough again briefly and divide into three equally sized pieces. Roll out each piece of dough to a approx. 10 x 35 cm large flatbread and sprinkle each flatbread with 125 g bacon and 125 g grated Gouda in the middle.

Form breadsticks

Fold the long sides over the filling, fold in the ends and place the strands with the seam down on a baking sheet lined with baking paper.

Let the breadsticks rise again

Let the formed breadsticks rise again in the oven at 50 °C for about 10 minutes.

Prepare herb sour cream

Put 500 g sour cream, juice of 1 lemon, salt and pepper in the mixing bowl and mix for 10 sec./speed 3. Then transfer.

Chop herbs

Wash, clean 1 bunch chives and 0.5 bunch scallions and put in the mixing bowl. Chop for 3 sec./speed 5. Add to the sour cream and mix.

Bake breadsticks

Bake the breadsticks in the preheated oven (convection: 175 °C) for about 20 minutes. Serve with herb sour cream.

These savory breadsticks with cheese and ham are a staple in our family, especially when we want something hearty to snack on. I remember well how my grandma used to bake them, but without a Thermomix®. It was quite a bit of hard work to knead the dough by hand! With the Thermomix® it is of course much easier and faster, without sacrificing the delicious taste. The secret of these breadsticks lies in the combination of ingredients. The wheat flour type 405 ensures a loose and airy dough. The fresh yeast is of course essential to let the dough rise and give it the typical bread structure. The sugar serves as food for the yeast and supports the fermentation process. The olive oil makes the dough smoother and gives it a fine aroma. The diced ham provides the savory taste and the spice, while the grated Gouda provides a creamy and slightly salty note. The sour cream in the dip provides a pleasant acidity and freshness, which is further enhanced by the lemon juice. Chives and scallions bring a fresh, spicy note to the dip. When preparing in the Thermomix®, it is important that the water for the yeast dough is not too hot, otherwise the yeast can die. Lukewarm is ideal. When kneading the dough, make sure that it is really smooth and elastic. This is important for the later consistency of the breadsticks. Frying the diced ham in the pan is important to give it roasted aromas and make it crispier. You can also fry the bacon in the Thermomix®, but it usually gets a little crispier in the pan. When topping the dough, make sure that the filling is evenly distributed so that the breadsticks taste the same everywhere. For a vegetarian version, you can simply replace the diced ham with diced peppers, olives or dried tomatoes. For a vegan version, you can replace the Gouda with vegan cheese and the sour cream with a vegan yogurt alternative. Instead of chives and scallions, you can also use other herbs such as parsley, basil or oregano. If you like it a little spicier, you can add a pinch of chili powder or some chopped chili to the dip. The breadsticks taste best fresh from the oven, warm and crispy. They are an ideal snack for parties, barbecues or just for in between. The herb sour cream goes perfectly with it, but other dips such as aioli, sour cream or guacamole are also a delicious addition. You can also prepare the breadsticks well in advance. You can prepare the dough the day before and let it rise in the refrigerator. The next day you only have to knead it briefly, top it and bake it. The baked breadsticks can be stored in an airtight container. They will keep for about 2-3 days. You can also freeze them and bake them again if needed.
