Description

Filled tortilla wraps with ground meat are a quick and hearty main course from the Thermomix®. Mixed ground meat, crisp iceberg lettuce, tomatoes, corn and kidney beans are processed into a spicy filling. The recipe is ideal for student cuisine, parties or as a quick snack. 8 servings can be made in just 25 minutes.

Ingredients (15 ingredients)

  • 500 g mixed ground meat
  • 3 piece Iceberg lettuce leaves
  • 2 piece Tomatoes
  • 2 piece Garlic cloves
  • 80 g Onion
  • 1 piece Bell pepper, red
  • 140 g Corn
  • 125 g Kidney beans
  • 2 tbsp Olive oil
  • 1 tbsp Paprika powder, mild
  • 1 tsp Salt
  • 0.25 tsp Cayenne pepper
  • 0.5 tsp Cumin, ground
  • 8 piece Wheat tortillas
  • 8 tsp Crème Fraîche

Preparation (8 steps)

Chop onion and garlic

Thermomix® Setting

Put 1 large, peeled onion into the mixing bowl and chop for 3 seconds/speed 5. Add 2 cloves of garlic and chop for 3 seconds/speed 7. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add 2 tablespoons of olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Fry ground meat (NOT in the Thermomix!)

Fry 500 g mixed ground meat (or beef ground meat) in a large pan with a little oil until crumbly and browned. Then season the ground meat with 1 tsp salt, 1 tbsp mild paprika powder, 1/4 tsp cayenne pepper and 1/2 tsp cumin.

Chop bell pepper

Wash 1 red bell pepper, core it, cut it into coarse pieces and put it in the mixing bowl. Chop for 4 seconds/speed 4. Use the spatula to push everything down from the edge.

Add vegetables and fry

Add the bell pepper to the ground meat in the pan. Drain 1 small can of corn (140 g drained weight) and 1 small can of kidney beans (125 g drained weight) and add them to the pan. Fry everything together for 2-3 minutes.

Add tomatoes

Wash 2 tomatoes, core them, cut them into small cubes and fold them into the ground meat mixture. Season again to taste.

Fill tortillas

Heat the 8 wheat tortillas according to the package instructions. Wash 3-4 iceberg lettuce leaves and cut them into fine strips. Spread approx. 1 tsp of crème fraîche on each tortilla and distribute approx. 1/8 of the ground meat mixture on top, sprinkle the iceberg lettuce leaves over it.

Roll burritos

Finally, fold the lower part of the tortilla upwards, then fold the sides tightly over the filling and roll up. If necessary, tie the burritos tightly with kitchen twine.

For me, filled tortilla wraps with ground meat are a reminder of uncomplicated student parties and quick dinners when time was short. The Mexican-inspired filling can be varied wonderfully and is always a hit, whether for friends or family. The secret of this recipe lies in the interaction of the various ingredients. The ground meat forms the savory base, while the onions and garlic are finely chopped in the Thermomix® and create an aromatic base. The red bell pepper provides a slight sweetness and a crunchy bite, while corn and kidney beans enrich the filling with texture and additional nutrients. The tomatoes bring a fruity acidity into play, which perfectly rounds off the dish. The spices, paprika powder, cayenne pepper and cumin, give the filling the typical Mexican note. The iceberg lettuce provides freshness and crispness, while the crème fraîche adds a creamy component. The Thermomix® makes preparation much easier. Chopping onions, garlic and peppers is quick and even. It is important not to chop the onions and garlic too finely, as they can burn when sautéing. Be careful not to chop the peppers for too long so that they still have a bite. I prefer to fry the ground meat in a separate pan, as it can quickly become mushy in the Thermomix®. This gives it a nice crust and it loses less liquid. For a vegetarian version, you can simply replace the ground meat with soy granules or lentils. For a vegan version, use vegan ground meat and vegan crème fraîche. You can let your creativity run wild with the spices. Chili powder, smoked paprika powder or a pinch of cinnamon give the filling a special touch. Serve the filled tortillas with guacamole, salsa or sour cream. A fresh salad also goes well with it. The wraps are also ideal as finger food for parties. Simply cut them into smaller pieces and secure them with toothpicks. The filled tortillas can be prepared well in advance. The ground meat filling can be prepared the day before and stored in the refrigerator. The tortillas should only be filled shortly before serving, as they will otherwise become soggy. Leftover wraps can be stored in the refrigerator and reheated the next day.
