Prepare dough

Place 500 g flour, 250 g sugar, 250 g margarine, 2 eggs, 2 packets of vanilla sugar, 0.5 packets of baking powder and 125 g ground hazelnuts in the mixing bowl and process into a dough for 2 min./kneading stage.

Cool dough

Remove the dough from the mixing bowl, wrap in cling film and place in the refrigerator for 60 minutes.

Preheat oven

Preheat the oven to 180°C circulating air.

Shape and bake biscuits

Remove the dough from the refrigerator. Using a piping bag, meat grinder or cookie press, apply strands, flowers or rings to a baking sheet lined with baking paper. Bake the raw biscuits for approx. 10 minutes at 180 °C in the preheated circulating air oven until they turn slightly brown.

My grandma used to bake these little delicacies at Christmas time, and the smell of freshly roasted hazelnuts and vanilla immediately awakens childhood memories in me. It's more than just a recipe, it's a piece of security. The list of ingredients may seem simple, but each individual component contributes to the perfect result. The flour forms the basis, provides the structure and cohesion of the dough. The sugar, of course, brings the sweetness, but it also influences the texture – too much sugar makes the biscuits brittle, too little makes them dry. The margarine, and this is where opinions differ, ensures the tenderness and crumbly texture. I personally prefer margarine because it gives the biscuits a fine, almost buttery note without being too heavy. The eggs bind the ingredients and give the dough elasticity. The vanilla sugar enhances the aroma and gives the biscuits a subtle sweetness. The baking powder ensures that the biscuits rise easily and do not become too hard. And then, of course, the main ingredient: the ground hazelnuts. They are the heart of this recipe, giving the biscuits their unmistakable taste and a slightly nutty texture. Make sure you use high-quality, freshly ground hazelnuts, as these develop the best aroma. The preparation in the Thermomix® is very simple and saves time. It is important that the margarine is at room temperature so that it combines well with the other ingredients. Place all the ingredients in the mixing bowl and let the Thermomix® do the work. Be careful not to knead the dough for too long, as it can become tough. The kneading setting for 2 minutes is ideal. After kneading, it is crucial to cool the dough sufficiently. The cooling time of 60 minutes is important so that the margarine solidifies again and the dough is easier to process. This recipe is already suitable for vegetarians. If you want to prepare it vegan, you can replace the eggs with applesauce or flaxseed flour. Vegan butter can be used instead of margarine. Feel free to experiment with other spices too! A touch of cinnamon, cardamom or grated orange zest goes perfectly with the hazelnuts and gives the biscuits a special note. Serve the hazelnut spritz biscuits with a cup of coffee or tea. It also goes wonderfully with a glass of milk or cocoa. As a side dish, I recommend a bowl of fresh berries or a scoop of vanilla ice cream.
