Description

Courgette flowers with garlic and anchovies are a tasty and quick appetizer to prepare, perfect for a light lunch or a summer dinner. Ingredients (6 ingredients)

  • 20 piece fresh courgette flowers
  • 1 clove garlic
  • 6 filetti anchovy in oil
  • 35 g olive oil
  • 1 q.b. black pepper
  • 1 q.b. thyme

Preparation of courgette flowers

Gently clean the courgette flowers, removing the stem and the internal pistil, being careful not to break them. Set aside.

Garlic and anchovies in the bowl

Put 1 clove of peeled garlic and 6 anchovy fillets in oil in the bowl. Chop for 3 Sec./Speed 7.

Sauté garlic and anchovies

Add 35 g of olive oil and sauté for 3 Min./120°C/Speed 1.

Add the courgette flowers

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the cleaned courgette flowers to the bowl. Cook for 5 Min./100°C/Reverse Speed 1.

Plate and season

Transfer the courgette flowers to a serving dish and season with a drizzle of raw olive oil, black pepper to taste and a few fresh thyme leaves.
