Description

These zucchini flowers stuffed with ricotta and olives are a delicious and colorful appetizer, perfect for spring and summer. The creamy ricotta blends perfectly with the strong flavor of black olives and the scent of fresh parsley. I often prepare them when I have guests for dinner, because they are easy to make and always make a great impression! The crispy breading makes them even more inviting. A tasty idea for a brunch or an Italian-style aperitif. They can also be prepared in advance and baked just before serving. A true triumph of Mediterranean flavors!

Ingredients (8 ingredients)

  • 8 piece zucchini flowers
  • 250 g ricotta
  • 1 pinch fine salt
  • 2 cucchiai grated cheese
  • 20 piece pitted black olives
  • chopped parsley
  • breadcrumbs
  • olive oil

Preparation (7 steps)

Cleaning the zucchini flowers

Gently remove the hard filaments at the base of the zucchini flowers and the central pistil. This step is essential to avoid a bitter taste.

Preparing the filling

Put 250 g of ricotta in the Thermomix. Add 1 pinch of fine salt, 2 tablespoons of grated cheese, 20 pitted black olives cut into small pieces and chopped parsley _q.b._.

Mixing the filling

Mix the ingredients in the Thermomix for 10 Sec./speed 3 to mix all the ingredients well. Check the consistency and mix again for a few seconds if necessary.

Stuffing the zucchini flowers

Gently stuff each zucchini flower with about 2 teaspoons of filling. Close the flowers by twisting the ends to seal the filling.

Preparation for breading

Gently brush the stuffed zucchini flowers with olive oil _q.b._ using a kitchen brush. This will help the breadcrumbs adhere better.

Breading the zucchini flowers

Gently roll each zucchini flower in breadcrumbs _q.b._, making sure it is well covered. Arrange the breaded flowers on a baking sheet lined with parchment paper.

Baking in the oven

Bake in a preheated oven at 170°C for 6-8 minutes, or until the zucchini flowers are golden and crispy.
