Description

This fluffy milk bread is a delicious yeast pastry that is ideal for breakfast or brunch. With the Thermomix®, the dough is particularly easy to make. The preparation time is about 3 hours, including resting times. The recipe is designed for 2 servings and is perfect for a cozy weekend.

Ingredients (7 ingredients)

  • 250 g Bread flour (Type 550 or 812)
  • 7 g Milk powder
  • 22 g Sugar
  • 3 g Salt
  • 180 ml Milk
  • 5 g Dry yeast
  • 22 g Butter (softened)

Mix dry ingredients

Add 250 g bread flour (Type 550 or 812), 7 g milk powder, 22 g sugar and 3 g salt to the mixing bowl and mix for 20 sec/speed 3.

Add yeast

Add 180 ml milk and 5 g dry yeast to the dry ingredients in the mixing bowl and mix for 30 sec/speed 3.

Knead dough (Part 1)

Knead the dough for 5 min/kneading stage.

Add butter

7 min/Kneading speed

Add 22 g soft butter to the dough in the mixing bowl and continue kneading for 7 min/kneading stage.

First resting phase

Remove the dough from the mixing bowl, place in a bowl, cover and let rest in a warm place for 60 minutes.

Portion

Divide the dough into two pieces and form them into balls.

Second resting phase

Cover the dough balls and let rest for 20 minutes.

Shaping

Shape the bread (roll out/roll the dough).

Third resting phase

Cover the shaped dough and let rise again for 40 minutes.

Preparation for baking

Sprinkle some flour over the top and cut the bread 5 times on top.

Baking

Bake in a preheated oven at 180 °C for approx. 22 to 25 minutes (depending on the oven).

Cooling

Let the bread cool before slicing.
