Description

These foam kisses are a classic pastry that delights with a fluffy sponge base, a creamy custard-cream filling and a crunchy chocolate coating. Preparation takes about 2 hours and yields 12 servings. Ideal for birthdays or as a sweet surprise in between. The recipe is moderately difficult and requires some patience when cooling and coating the foam kisses.

Ingredients (10 ingredients)

  • 4 Stück Eggs
  • 125 g Sugar
  • 125 g Flour
  • 0.5 TL Baking powder
  • 500 ml Milk
  • 1 Päckchen Vanilla pudding powder
  • 50 g Sugar
  • 400 ml Cream
  • 200 g Bittersweet chocolate
  • Chocolate sprinkles (optional)

Preparation (12 steps)

Prepare sponge base

Preheat the oven to 180°C top/bottom heat. Line a baking tray with baking paper.

Beat eggs and sugar

Put 4 eggs and 125g sugar into the mixing bowl and beat with the butterfly inserted for 4 min./speed 3.5 until the mixture is foamy.

Mix and fold in flour and baking powder

Mix 125g flour and 1/2 tsp baking powder. Remove the butterfly. Carefully fold the flour mixture into the egg-sugar mixture with the spatula.

Bake dough

Pour the dough onto the prepared baking sheet and spread evenly. Bake in the preheated oven for about 10-12 minutes. Let cool after baking.

Prepare filling

Put 500ml milk, 1 packet vanilla pudding powder and 50g sugar into the mixing bowl and cook for 7 min./100°C/speed 3 without a measuring cup.

Let the pudding cool down

Pour the pudding into a bowl, cover with cling film directly on the surface (prevents skin formation) and let cool.

Whip cream

2-3 min/Speed 3,5

Put 400ml cream into the mixing bowl and whisk with the butterfly inserted for 2-3 min./speed 3.5 until stiff. The time may vary depending on the cream, so watch the process.

Mix pudding and cream

Thermomix® Setting
30 sec/Speed 2 Reverse

Put the cooled pudding into the mixing bowl. Reinsert the butterfly. Carefully fold the whipped cream into the pudding, 30 sec./speed 2 reverse.

Prepare sponge base

Cut the sponge base into squares (approx. 6x6 cm).

Apply filling

Fill the pudding-cream mixture into a piping bag with a large nozzle and pipe onto the sponge squares. Refrigerate the foam kisses for about 1 hour.

Prepare chocolate glaze

3 min/122°F/Speed 2 122°F

Put 200g bittersweet chocolate in pieces into the mixing bowl and chop for 10 sec./speed 8. Then melt for 3 min./50°C/speed 2.

Cover foam kisses

Dip the chilled foam kisses into the melted chocolate and let drain on a wire rack. Decorate with chocolate sprinkles as desired. Refrigerate the foam kisses until serving.
