Description

This aerated chocolate fondant is an absolute delight! I often prepare it for birthdays or dinners with friends, and it always makes a splash. The secret lies in the lightness of the egg whites beaten until stiff, which give an incredibly soft texture. The intense dark chocolate goes perfectly with the sweetness of the sugar and the crunchiness of the cookies. It is a simple dessert to make, but which impresses with its taste and presentation. Prepare it in advance, it will only be better! A real treat for chocolate lovers.

Ingredients (6 ingredients)

  • 200 g dark chocolate
  • 150 g Petit Beurre cookies
  • 1 c. à s. flour
  • 200 g sugar
  • 2 piece egg whites
  • 3 piece eggs

Preparation of chocolate and butter

Thermomix® Setting
4 min/122°F/Speed 2 50

Put 200 g of dark chocolate and 150 g of butter in the Thermomix bowl. Melt for 4 Min./50°C/Stufe 2.

Mixing the egg yolks and sugar

Thermomix® Setting
3 min/Speed 4

Add 3 eggs and 200 g of sugar to the Thermomix bowl. Mix for 3 Min./Stufe 4 until the mixture whitens.

Preparation of the cookies

Thermomix® Setting
10 sec/Speed 6

Put 150 g of Petit Beurre cookies in the Thermomix bowl. Blend for 10 Sek./Stufe 6 to obtain a fine powder.

Adding flour and cookies

20 sec/Speed 3

Add 1 tbsp of flour and the mixed cookies to the chocolate-egg-sugar mixture. Mix for 20 Sek./Stufe 3.

Beating the egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Insert the whisk. Add 2 egg whites and a pinch of salt to the Thermomix bowl. Beat until stiff for 3 Min./Stufe 3.5.

Incorporating the egg whites

Remove the whisk. Gently pour the egg whites into the bowl and mix with the spatula using movements from bottom to top so as not to break them.

Oven baking

Pour the preparation into a buttered and floured mold. Bake in a preheated oven at 180°C for 15 to 20 minutes. Check for doneness with the tip of a knife.
