  • 0.5 cup water
  • 4 piece baking chocolate
  • 2.5 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 cup white sugar
  • 1 cup shortening
  • 4 piece eggs, separated
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 packet cream cheese, softened
  • 1.5 cup white sugar
  • 4 piece eggs, lightly beaten

Prepare the baking pan

Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking pan and set aside.

Melt the chocolate

Add chocolate to melt

Add 4 (1 ounce) squares of baking chocolate to the mixing bowl and melt for 2 Min./50°C/Stufe 2. Ensure the chocolate is fully melted and smooth.

Sift dry ingredients

Sift 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt together in a bowl. Set aside.

Cream sugar and shortening

Add 2 cups of white sugar and 1 cup of shortening to the mixing bowl. Mix for 2 Min./Stufe 3 until creamy.

Add egg yolks

Add 4 egg yolks to the mixing bowl and mix for 30 Sec./Stufe 3 until smooth.

Add milk and vanilla

Add 1 cup of milk and 1 teaspoon of vanilla extract to the mixing bowl. Mix for 20 Sec./Stufe 2.

Mix in flour mixture

Add the sifted flour mixture to the mixing bowl. Mix for 30 Sec./Stufe 3 until just combined. Use the spatula to scrape down the sides of the bowl if necessary.

Fold in melted chocolate

Add the melted chocolate to the mixing bowl. Mix for 20 Sec./Stufe 2 on Linkslauf to gently fold the chocolate into the batter.

Beat egg whites

In a separate bowl, beat 4 egg whites until stiff peaks form. This step is done outside of the Thermomix.

Fold in egg whites

Gently fold the beaten egg whites into the batter. This step is done outside of the Thermomix.

Prepare cream cheese filling

Add 2 (8 ounce) packages of softened cream cheese and 1 ½ cups of white sugar to the mixing bowl. Mix for 1 Min./Stufe 4 until smooth.

Add eggs to cream cheese filling

Thermomix® Setting
20 sec/Speed 2

Add 4 lightly beaten eggs to the mixing bowl. Mix for 20 Sec./Stufe 2 until just combined.

Assemble the cake

Pour half of the chocolate batter into the prepared baking pan. Pour the cream cheese mixture over the batter in the baking dish. Gently spoon the remaining chocolate batter on top and spread it to the edges of the dish. Use a knife to create a swirl pattern.

Bake the cake

Bake in the preheated oven until a toothpick inserted into the center comes out clean, 75 to 80 minutes. Cool in the pan for 30 minutes, then transfer to a wire rack to cool, about 30 minutes more.
